Greetings from Philly- newborn Breadhead joins your ranks

Hey all... just a quick thread to introduce myself. I'm a pastry chef in philly and have recently started to investigate the wide world of all things yeasty... and a bread geek was born. Now i wake up with "bread head" in the morning after dreaming about poolish... i think i have a problem. lol.

Anyway i'm lookin forward to contributing hopefully as much as i can after all the help you folks have given me as a casual observer here before i realized i could actually join this site and participate (i'm not exactly tech savvy but i'm comin along)...

Hmmmm ... I wake up many mornings feeling like my head is full of poolish, but it's nothing that 6 cups of coffee can't cure.

When I dream of Philly breads, I dream of real hoagie rolls (not whatever it is they keep trying to feed us elsewhere).  If you ever have a good formula, some of us in the Rocky Mountain Area would be eternally gratefull...
