Are eggs necessary in quick breads?
I would like to make a banana bread to take to work but all recipes have egg in them. I need it to be eggless. Is that possible? Should I substitute something else for the egg?

In place of one egg, you can use 1 tablespoon ground flax seed in 3 tablespoons water, let sit until a 'gel" forms. This is regularly used in gluten free baking.

You can get some egg substitute from bakery stores. Also, when making a quick bread you can substitute eggs by using soy lecithin. But another good option is to use chickpeas flour diluted in water instead of eggs, 2 tbs of flour to substitute one egg. Use enough water to get a texture similar to an egg, maybe a little bit thicker, le it sit for about 10 minutes and then use it for your batter. You can use a mixture of chickpeas flour and also use soy lecithin, and the results will be incredible.

Try upping the banana by 1/2 banana for each egg. I make banana nut muffins regularly this way.

Yay for vegans, and yay for you for caring enough to learn how to include her in your baking adventures. :) You'd be suprised how many times my fiancee and I have essentially been told to "deal with it" by friends and family because of our dietary choice.
And I think that the more you look into "veganizing" recipes to include your friend, you'll find that it's really not that hard to do. There are enough ingredients out there that you can make most anything vegan with a minimum of effort.
