Uneven browning and sometimes no browning at all

I use a recipe to make asian style filled buns....

the problem is, sometimes, it will brown properly...other times, its as pale as a ghost,....

 also, if it DOES brown, it is uneven and horrid looking....with spots of brown here and there.....

can someone help meeee??

Did you apply egg wash? a yolk-and-milk egg wash works well for me. Mix 1 yolk with a tablespoon or two of milk and a pinch of salt. Apply the wash evenly with a silicone or feather brush. If all else fails, let your buns broil during the last minute of baking, just to give it a nice brown color.
