Brotform Flour Requirement
Greetings and the question I pose is this:
From Fantes I own their largest brotform having the dimensions of 17" long x 6 1/2" wide x 3" height. What is it's optimum flour content? Judging from the brotform specifications listed at Kerekes; I feel that its purpose in life ranges from 7-8 Cups of flour. Anyone out there have solid experience with this size of brotform?????
But if you try a recipe and it comes out short, roll up a floured cloth and place at one or both ends or make a long coil to go around the dough on the sides. Have to big a form for the dough can lead to a flat loaf.

I assume dough: approx 8C of KA AP flour + 3.4C water. Yeah, I hate the lack of standardization in expression given out by baking [equpiment] establishments.
