How long can a sponge be refrigerated?

I made a sponge out of a small portion of my starter yesterday. It sat out for the required 8 hours yesterday and I refrigerated it overnight. I planned to use it today, per the recipe I'm following, but of course life has intervened and I won't be able to bake until tomorrow. Can the sponge sit another day or so in the fridge without compromising the quality of the final product?

Actually, I have been experimenting and with my last loaves, I left the sponge in the fridge for 3 days... then took it out and immediately added my additional flour and remaining yeast, made loaves, panned them then placed them in the fridge for the night.  The next day I baked them immediately after taking them out of the fridge and they turned out just fine...

I will admit that they did have a tendency to fall a little while baking, but the flavor was what I was after and they were really good.

Anyway, that's my story and experiment...
