I will probably attempt Pierre Nury's Rustic Light Rye this weekend.......looks to be a great recipe....does Pierre Nury have a bread book? Title? Comments on this book! Thank you
Pierre Nury is an eminent baker from Loubeyrat, in the Auvergne region of France. As far as I know, he has not published a cookbook. The recipe for his "Bagnat," or "Rustic light rye" is found in Daniel Leader's book, "Local Breads."
It is highly recommended!
