My rolls look cloudy

I have tried to recreate a delicious roll made at the Smith and Wollensky restaurant in Washington, D.C.  The rolls are served piping hot with melted butter and sprinkled with coarse salt and rosemary on the tops.  Delicious! When I did the same, my rolls appeared cloudy, kind of messy on the tops.  The salt was OK: It didn't melt.  Is it the butter?  I can't figure out what's wrong.  I've got a batch rising right now and I'd like to use the salt and butter but I don't want the messy look.  Any suggestions? Melt the butter before you brush it on the top of the rolls........leave the milky solids in the bottom of the bowl and use the clear top liquid (ghee) to brush on the rolls. I also noticed when I would apply soft butter to the tops of breads and rolls after they were baked they always took on a cloudy appearance......they got a funky look to them and people wouldn't even try them most times. Try my method and see if it works better for you.

I just tried your method on two rolls that are now in the oven.  I'll let you know how they turn out in 25 minutes.  Thanks so much.

I am glad it worked for you. I always used to wonder why some peoples rolls looked so pretty when they all said they just brushed butter on them when they came out of the oven........when I tried it all I ever got was a flim that sort of slid right off the roll or bun and had a cloudy look to it, it really wasn't attractive looking at all. I think the milk solids in the butter are the cause so I came up with the idea of melting the butter (instead of just letting it soften to room temperature) and using the clear liquid (ghee) to brush the tops......no more funky looking rolls or breads.
