Anyone have a good Cinnamon Swirl Bread Recipe? I have tried the one from Cook's Illustrated twice and it didn't go well. Maybe my oven or something, but I couldn't get the inside done without over doing the outside. Anyone have a recipe for this? I am looking for a nice clean swirl inside with a sweet bread, .... recipes?

That could work. Could I swap out the Rye and Whole wheat for extra All-Purpose? Also plan to remove the raisins. But the recipe looks good.

ive got a recipe for cream buns but i always use the dough to make cinnamon buns, its so soft. its a two second dough u make in the processor. rest twent mins. actually you con't even have to rest it for a rolled dough. let me know if you're interested and il post it. the last few times though ive been using the master recipe from artisan bread in fi ve mins a day because its quick (i usually have some leftover dough in fridge).

okay here it is, its from an old family circle cookbook which are sadly going out of print, its titled 'scones & muffins'.
CREAM BUNS
3 1/2 cups plain flour
2 Tblsp sugar
pinch salt
1 1/3 cups milk, warmed
60g butter, melted
7g sachet dried yeast
i add:
vanilla essence
pinch baking spices
filling (if making cream buns):
1/2 cup rasberry jam
1 1/4 cups cream
3 Tbsp icing sugar
by the way the aussie tbsp is 20mls.
combine all dry ingredients in processor
mix liquic ingredients, add to processor.
process for 30 seconds until soft dough forms.
now you can either transfer to an oiled bowl and let rest till well risen. or tip out onto lightly floured board roll/ flatten out and slather with butter sprinkle over some brown sugar white sugar raisins cinnamon. roll up jelly roll style. slice. onto baking sheet and bake in preheated oven, 210 degrees celsious till well browned 20 mins for the buns.
this is a really beautiful dough, very soft. i usually brush buns with a sugar syrup (milk + sugar heated tog.) as soon as they come out of the oven and then drizzle over some icing once cool.
