Suggestions for Using Up Excessive Amounts of Sourdough Starter

I have close to 3000 grams of the sourdough starter, 100% hydration as per gaaarp's recipe.  It is lovely and  has been growing healthily for a month now (thank you gaaarp).  I have not discarded any of it at my last feeding and now have to deal with this abundance.


I will be very happy if you can lead me to some good rustic recipes that call for large amounts of starter.

SD English Muffins (per recipe on this site) and King Arthur's SD Waffles (their site) come to mind.

I used some of mine to make SD pancakes...  Unfortunately I used krusteaz Pancake Mix as my base...


I am going to search this site for a good homemade pancake mix.  If anyone knows one, please let us know...

This a mix I just saw posted but it needs to be converted to sourdough. I'm sure it can be done easily as pancakes are so forgiving.

It's a small world.  Just this morning, we were snowed in, so we decided to take the time to make a real breakfast.  I pulled some old excess starter from the back of the fridge.  It was about half whole wheat and half white, and was at least three months old.  I poured off the hootch, stirred in an egg, because I had one left in the carton, added about two teaspoons of honey, and thinned the mixture with milk until it was a good pancake batter consistency.  I probably had 2 1/2 cups of batter.  I added 1/2 tsp of baking soda, and let the mixture start to bubble while I heated the skillet.


The pancakes were great.  Next time, I'd add a little salt, though.

for all the suggestions.  Waffles were heavenly and I am nicely surprised how well they freeze.  This assures luxury breakfasts made in no time for a few good weeks now.  The English muffin recipe is the next one to try.
