Sweet flat bread in Pyrenees

A few years ago we bought a Sweet flat bread in Pyrenees, I have searched the web but cannot identify it. I am looking for a name and better still recipe!

I think the name is " Fougasse " from my native pyrenees

I have a recipe that is traditional to Lyon, but the book explains that different regions of France have their own version. It's basically an enriched dough (similar to brioche using eggs, a little sugar and butter). The dough is rolled out very much like a big pizza....then dabbed with soft butter and sprinkled with sugar.....I sprinkled a little cinammon on mine.....The finished product could be described as a high class cinnamon toast.....but better.... :)

I'm sorry....the finished product is called a "galette"
this particular one is called "Galette Perougienne".....

I have checked the galette perugienne and I still think the fougasse is the closest to a flat sweet bread .


It has anise seeds and a bit of orange peel for flsvor. Hope this help and both can be searched on Google with pictures - Good luck - Philippe
