Any links or books on some of the wonderful,unique roll shapes?

I was recently at a large, Hispanic grocery store that had a large bakery. Some of the bread and roll shapes were so beautiful and unique! In addition,someone recently posted,here, a picture of a shell-shaped roll and was inquiring how everyone thought it might have been shaped?

So, are there some websites or books with a good selection of how to shape some of these unique shapes? At the Hispanic bakery there was a turtle,a hedgehog (wonderfully detailed) and several other freeform shapes that were just beautiful.

I have googled around but I'm actually not finding too much.

I've seen videos

I've seen videos of bakers forming exotic animal shaped breads on u-tube. I didn't bookmark any of them, but you might search there.

Mantovane/Mantovani

I think those are called mantovane, or a mantovani...  The recipes and forum are in Italian though...
