Currant bread with bulghur wheat and seeds

I've been playing every weekend with add-ins, this is my latest effort. Also the highest ratio of whole wheat to white I've challenged so far.

450 g. AP flour

550 g. whole wheat flour

160 g. type 110 starter, 100% hydration

19g. salt

741 , water

80 g. hemp seeds

50 g. toasted sesame seeds

80 g. bulghur wheat

150 g. dried currants

I soaked the bulghur and currants overnight, they took up a lot more water than I expected. Unfortunately I didn't keep track of the amount of water in the soaker, something to remember for next time.

After a 2 hour autolyse I mixed everything else and then bulk fermented for just under 5 hours at 82-84 df, with 6 sets of stretch & folds at 30 minute intervals, then left alone. I had a busy weekend so instead of retarding as I usually do I went ahead and preshaped, rested, shaped 2 boules and proofed for about an hour. Shaping was a challenge, as the dough was much wetter than I anticipated for 76% hydration. My assistant Photon was no help at all, his job is normally to walk across the floured board and if possible step on the resting dough.

I preheated my dutch ovens to 450 df, baked at 425 covered for 20 minutes and uncovered for 20 more. As usual, my glazed dutch oven gave considerably better spring than my combo cooker, I've come to expect that.

I think I should have proofed the loaves longer, but I was timid with the dough so wet. The flavor is wonderful, nutty and chewy and only mildly sour.

Bouabsa Style Baguette

A while ago, I had asked for baguette help and Alfanso was kind enough to share three formulas.  My mom had knee surgery almost 3 weeks ago and being French, she loves baguettes. Does she want my other bread? No! She wants baguettes.

So I went back to Alfanso's post and made the first formula. Of course, mine are nowhere near as pretty as his but they still thrilled my mom. 

I followed the recipe as posted below aside from sneaking in 25 grams of wholewheat and 25 g of dark rye. Here is the link:

Bagatelle T65 - First test of many... Amazing flour!

Actually is the second. In the first try I managed to over knead the dough while doing S&F!! It was sad, but it shows how easily this flour develops the gluten. Very easy. After the @#$$%& was done I reached the net to find more about the flour, and apparently this have being noticed before, even compared with others strong flours, some posts here also said this.

And indeed it was fast and easy to develop. 

I made basic white 1:2:3. By making this dough at 71% made me notice that the doughs I was making with same hydration and some local organic (14% protein, but some thing very different...) or "00" soft flours, was far far far very much a lot more slack and daunting to deal with. That was a piece of cake. : ) Perhaps dealing with those porridge likes dough has served to improve my skills, with this dough I think I could even make baguetes. Also I got ears and great oven spring. Ok, flour makes A LOT of difference, learned. 


Saturday:

  • 06:30 am - levain build  1:2:2 
  • 04:00 pm - mix (levain almost beginning to deflate already)
  • 04:30 pm - After autolyse, hand knead. It was easy
  • 05:00 pm - Bulk 
  • 06:00 as 09:00 pm- Some S&F as neede, not more than 3.
  • 09:00 pm - Divided/pré-shape (no flour to hanlde)
  • 09:30 pm -Shape and banneton( almost no flour to handle)
  • 10:00 pm -Final proof in fridge

Sunday:

  • 10:50 am - Score and oven at 240c. Covered for  20 min plus 30/35 uncovered.

The oven temp dropped considerably at loading, and took some time to recover, perhaps b/c of the cold dough, so average tem was more like 210/220 c

Double fermented oat porridge SD

This week’s bake was an experiment for me!  Dab suggested fermenting the porridge mix that I add to the dough. I didn’t know that was even a thing, so of course I had to try it.

Method:

1. 3 stage levain builds (all w/w flour) from 6g of NMNF rye starter, into the fridge overnight.

2. Toast 50 g rolled oats separately from the pecan and sunflower seeds.

3. The night before mixing, cook the oats over a low heat in 200g of water, until it’s a thick/stiff porridge. Mix 170g of the porridge with the seeds and crushed pecans. Leave to cool.

 

Mix 6g NMMF rye starter with 12 g of water and add to the cold porridge. Leave to ferment overnight (12 hours). [In the morning, It didn’t look like the porridge had done anything but it definitely smelled like something had happened! It smelled like my starter when its hungry, a sort of sweet sharp smell.]

4. Make the autolyse and leave overnight in the fridge.

5. 2 hours before mixing, take everything out of the fridge

6. Mix everything plus salt. Rest for 45mins.

 

7. 4 S&F at 45min intervals. Bulk ferment for 2.5 hours or until it’s got some good bubble action going. Pre shape, 30min rest. Shape, 1 hour on the counter, then into the fridge (19 hours).

8. Remove from fridge, score and bake at 240dC for 25mins with steam, then at 220dC for 25mins, turn off oven and leave loaf in for another 5mins. 

 

I knew the dough was over proofed as soon as i took it out of the basket #shameface. I decided to carry on anyway. 

The loaf sprang okay, but it spread more. I cut down the amount of levain i would normally use, but I think I needed to reduce the bulk fermentation because of the extra starter in the porridge. 

 

The crust is nice and crunchy. 

 What i am most pleased about is the taste! I was expecting to get a really sour loaf, but i didn't. Its actually quite mellow, but it has an enhanced flavour compared to the other porridge loaves i've made. It also has a subtle nuttiness in the background from the crushed pecans. I've tried to get that background nutty flavour with crushed toasted sesame seeds, which was great too, so i thought i'd give crushed pecans a try too. 

Overall, i like this double fermenting business. I'll try this again with a few tweeks to the recipe and see how it goes. maybe i'll try a double fermented polenta porridge loaf?

Spelt Durum Cheese English Muffins Grande Size

  I had not made English Muffins in quite some time, so I opened up a recipe from the last time I baked them and modified it with what I had on hand.  I ran out of Greek Yogurt so I substituted some Buttermilk and probably added a little bit too much in the process.  The dough was a little wetter than it should have been, but in the end the flavor was amazing.  The addition of the freshly ground Spelt and Durum flours along with the onions and cheese made this one of my favorite English Muffin bakes to date.

I used the biggest cutter I had and once these bad boys hit the cooker they puffed up like nobodies business!  I ended up with some Super Sized muffins, but boy are they tasty.  Perfect with some butter or cream cheese or as a bun for a cheese burger.

The addition of the buttermilk just served to make the flavor of these even better and highly recommend you give these a try.

Directions

Mix flour, starter, water, buttermilk, onions and yogurt in your mixing bowl and mix for 1-2 minutes to combine.

Cover the bowl and let it sit out at room temperature overnight or for at least 9-10 hours.

The next morning add the rest of the ingredients and mix for a minute.  Knead the dough either with your mixer or by hand for around 4 minutes, adding additional flour if necessary.  Next roll out the dough to about 3/4" thickness on your work surface.  You will have to put some bench flour on the work surface to prevent the dough from sticking.  Using  4" biscuit cutter or can, cut the muffins out and place on a pan lined with parchment paper dusted with corn meal or semolina flour.  You should end up with 10-12 muffins.  If necessary you can combine the scraps and roll out again but you may need to let it rest before rolling.

Cover the muffins with a clean misted or floured towel and let rest for 1 hour at room temperature.

Heat your griddle or heavy skillet to medium or around 350 degrees  and when ready to cook spray some cooking spray on the cooking surface before placing the English Muffins in the pan.

Cover the pan to create some steam and let cook for around 5 minutes or until the bottoms are nice and brown.  Flip and cook another 5 minutes and remove to a baking rack to cool.

Going to San Francisco for the First Time!

Hello all! I have about one day (maybe two) to spend in Frisco, not long enough :( 

I'm going next weekend, and would greatly appreciate recommendations for acquiring some true, old fashioned sour dough breads. I'm an intense purist, really looking for the bakeries that make true sourdough with plenty of balance (not just overly sour bread).

But, I also enjoy suprises, so any other baked goods you can suggest would be much appreciated. I will hopefully be filming a video of my adventures, which I'll post here when we come back.

So far, Tartine seems very interesting, though some folks say it's quite overpriced.

Sushi recommendations also appreciated. ^_^

Broken Oven bread

Hi All,

My double oven is still not here.  The heating coil on the bottom is way off and cannot be fixed and the door on the upper one is off it's hinge.  I couldn't wait to bake so flew by the seat of my pants in baking a four flour bread: AP, ww, Rye and Durum, w Durum and AP in the levain.  It is a variation of Essential's Columbia.  Very mild.  Did 3 small and 2 larger loaves. 

I had a bit of trouble w Sylvia's steaming method (my fault) and didn't get quite the oven spring as I'd have liked in the larger loaves.  Not bad for a busted oven.

Taste is very mild and not at all sour (my husband's preference) and I sneaked in some good non-AP flours totaling about 45% of the total (levain included).  He liked it... making progress w this Southern boy born and raised on Wonder Bread, yuk... lol. Hope proper oven comes soon.             hester

Multigrain sourdough

 

I decided I needed to check starter activity as it had been untouched in fridge since early August appart from a refresh last week.  I had quite a few grains in the pantry so decided these needed to be used up.  I made my favourite multigrain recipe but made a couple of small changes.  

Built levain in one step just becore bedtime - 50 gm starter, 100 gm water, 100 gm higrade flour and left it overnight. made hot water soaker with grains and salt and left overnight. in the morning mixed higrade flour, whole wheat flour plus a little gluten with remaining water and a little honey to get a shaggy dough.  It was drier than I usually make so after about 20 minutes of autolyse I added grain mix and levain on top and left a further 15 minutes before mixing by hand.  1 slap and fold and dough was very tight so the other 3 were stretch and fold only.  Dough was pretty slow but by 6 pm had risen nicely and doubled. pre shaped aand left it while we had dinner, then final shape and into frige overnight. baked direct from fridge this morning in DO.  Really happy with this, its always good but this time was a bit better than usual.

hubby with one of the 550 gm loaves - he'd eat it all if he had half a chance :)

Starter Ratios - Which to Use and When?

First post (other than the intro, of course...) and appropriately I'll start with, well, starters!

Me? I grew up in the Bay Area and was basically raised on San Francisco sourdough bread - love the stuff - very firm sourness most times. Mom always had a starter in the fridge. I never knew what that was all about until now. 

Recently I started reading up and decided to get a starter going. It took a few weeks but now I have one and it is going strong. It began its life the first week of July and I've made a few loaves from it already. Now it's time to step my game up.

Quick note about me; I am an electrical engineer (also a homebrewer so fermentation is very interesting to me) and I like things highly technical so don't pull any punches.

So, when making my levain for an upcoming loaf (or two), I'd normally take the 1L Cambro of culture (mother) out of the fridge and let it come to room temperature, draw a small amount into another 1L Cambro (these containers are great! Cheap, too!), feed with a 1:1:1, wait a day, repeat, and commence with the making of the bread. Don't worry; I weight everything!

My question is this; what if I went to a 1:2:2 or even higher ratio for my levain? What are the advantages of these different ratios/hydration levels? Assuming all King Arthur AP flour (yes, I know; time to start playing with different flours - WW, Rye, etc. Ah the learning curve...), how would different ratios affect the final product?

I'm looking at getting a handle on acid production here - I like a firm bite in sourdough and I'd like to be able to achieve this in my bread.
