Whole Wheat W/multigrain soaker

I made this bread yesterday from Hamelman's yeasted prefermets section. I used 50% Strong white Hovis bread flour, and 50% Snowflake Nutty Wheat Flour. As the latter contains too much bran, i adjusted by adding some all purpose flour to the final dough.

I mounted two baking stones on two separate racks. The oven spring was better this way, i think. I used Sylvia's Steaming technique.. (very effective).

I cut some slices today morning, and the bread smelled strongly of buckwheat. I used buckwheat in lieu of millet called for in the recipe. The crust is crunchy, and the crumb is soft and satisfying. I love this bread!

Sourdough Fig Focaccia

 

This sourdough focaccia if based on the excellent post,  for a 'sourdough raisin focaccia' by bwraith.  http://www.thefreshloaf.com/node/2581/sourdough-raisin-focaccia

 I halved the recipe and adjusted the hydration to use all duram flour to mix with my regular bread flour sourdough pre-ferment.  It turned out very much to our liking, my husband ate 3 slices and said he liked it best with the goat cheese.  Thanks to Franko recent posts on using duram flour, I was inspired to bake a semolina sourdough focaccia today.  I knew my figs were not going to wait for my next wfo baking!

So for winging this recipe, it turned out quite delicious.

7/2/11 - Pizza au Levain for Breakfast


I had some extra sourdough starter that I needed to use, and have been craving pizza for breakfast.  This recipe is extremely easy and the dough is very flavorful and has a light sour tang.  Enjoy!

Recipe
266g AP (+ 1 tbsp of whole wheat flour)
176g water
54g stiff SD starter at 50% hydration straight from fridge
6g Kosher salt
502g approx dough yield

Canned crushed tomatoes
Fresh mozzarella (sliced and or diced)
Whole milk ricotta cheese (strained)
Fontina (sliced)
Radicchio - washed and shredded
2 eggs

Method:
12:15am - Mix all ingredients by hand in a mixing bowl until you get a shaggy dough.  Cover and let rest.
12:35am - Knead dough for a few seconds until it is smooth.  cover and let rest.
1:05am - Turn dough (stretch and fold) in bowl, lightly coat dough with olive oil, cover and let rise on counter overnight.
8:30am - Place baking stone with longest side parallel to the oven in the center of the bottom rack, preheat oven to 650F (turn oven on convection to 550F and preheat for one hour).  Place oven thermometer on stone to you can see the actual temp of the stone.
9:30am - Take thermometer out of oven.  Turn oven off convection.  On a floured work surface, stretch dough out to the size of the pizza peel, lightly flour peel.  Place pizza dough directly on baking stone and bake for 2 minutes.  Then, take pizza  crust out of oven, spread crushed tomatoes to the farthest edges.  Then on 1/3rd of the pizza, arrange the radicchio and fontina, on another 3rd, place the mozzarella, the final 1/3rd, place the ricotta.  In the center break 2 eggs.  Place pizza back into oven close to the left side of the stone for 3 1/2 minutes.  Scoot pizza over to right side of stone, bake for another 3 to 3 1/2 minutes or until the egg is cooked to your liking (slightly runny yolks).  Take pizza out, let cool for a minute or so, cut and eat.


Notes: Placing the pizza close to the edges of the stone allow the crust to receive the maximum amount of heat radiating from the bottom of the oven, so it chars like a wood or coal fired oven.  Moving the pizza from each side allows both sides of the crust to char.

Prebaking the crust avoids the wet soggy crust under the toppings, and also makes the pizza easier to place into the oven without risking the dough sticking to the peel, or the sauce and toppings weighing down the crust.

Recycle rye recipe

This recipe is inspired by quite a few recipes I've read the past few months. In my opinion this makes an excellent rye loaf.

Ingredients:

  • 300 g Cold water
  • 100 g 5-grain
  • 100 g Stale rye bread
  • 100 g Sourdough (click for my recipe)
  • 5 g Fresh active yeast
  • 10 g Sea salt
  • 200 g Whole rye flour
  • 200 g Graham flour
Pour the water into a bowl and dissolve the yeast. Put the grain mixture and the stale bread, which you have shreadded into tiny bits, into the water. Let it soak for 15 minutes or so.Add the sourdough and salt, mix. Start adding the flour, little by little to make it easier to get a smooth dough.Start kneading. The dough should be rather sticky and difficult to knead, unlike white breads. But you need to knead it for a while to heat up the dough and activate the yeast.Leave it to rise until doubled. I left it for 90 minutes and then I put it into the fridge over night. The next morning I took it out, shaped it into a loaf in a baking tin. Let it again rise to about double size. Just make sure it doesn't overrise and collapse on itself.Get your oven to max heat and place the loaf on the bottom shelf. Turn the heat down to 170 degrees celcius and bake for around 90 minutes, until it makes a hollow sound when you knock on the bottom.If you enjoyed the bread, repeat the process when it gets stale.

My sourdough

Here's my take on sourdough, it as worked for me.

Ingredients:

  • 3 dl Cold water
  • 75 g Rye flour
  • 75 g Graham flour
  • 150 g Wheat baking flour
  • A small handful of raisins
Put the raisins in a bowl with the water. Let them soak for about 15 minuts and take them out. Mix in the flour and put it in a glass jar. It's supposed to be rather watery, so don't worry about it not looking like dough.Cover the glass jar with a piece of regular kitchen paper, held by an elastic band. This allows the sourdough to breathe without attracting unwanted bugs.Stir the sourdough once every 8-24 hours. And once a day remove 50g and add 25g regular wheat baking flour and another 25g cold water and mix. After a few days you should be able to bake with sourdough.Continue the process for as long as you want to have sourdough.Every time you use some of it, add the same amount half and half of wheat flour and cold water to the sourdough. Depending on how much you use, your starter should be ready again in a few days.*Note: Mine did start so smell a bit like old milk after the first few days, but the smell went away and it started smelling like delightful yeast.

Brioche

I've had two attempts at making brioche so far (with two different recipes - one from Artisan Breads Everyday, the other the Ottolenghi Cookbook), but both attempts have turned out badly.   Both of the doughs "spread" during proving, resulting in some very flat rolls (and some indistinct knotted rolls).  Also they had a surprisingly greasy texture after they were baked, leaving an oily film on anything they came into contact with (not entirely sure this is normal).  Any advice on where I'm going wrong would be greatly appreciated.  Thanks in advance :)

No New Orleans French Bread 4 U !!!!!!

I just want to say thanks for all the efforts to clone a New Orleans Style French Bread,thos has been one of the hardest things that we had to get use-to after becoming a Katrina Transplant. No more of the "Very best Po-Boy Bread" on earth,where we come from Mamma used French Bread Soliders( U have 2 be a Local 2 know what FB Soldiers are) to wean us from de bottle.We have tried it all,N.O.water,rice flour,commercial flours,different blends of flours,different ovens,on & on& on...& it's still different!-Never like The Real Thing,Some real good bread but not The Great Po-Boy Bread of Home.We had gotten to the point and admitted that we would just have to settle for.....something else,this was fine,UNTIL we decided to open a New Orleans Style Po-Boy Shop & Catering Service out hear in Utah. I hate to just say "they will never know the difference" But I will! We to have the Muffalatta Bread down prefection...Po-Boys no-where even close. I think our next move will be to see if we can have un-baked bread shipped and see if that will help out.If anyone ever gets this right, I'll send you my 1st born,matter of fact I'll send All of Then 1st,2nd & 3rd, OK then just send me yours! Don's Woodfired Sourdough Bread

If you’re anything like me, you’ve got a few sourdough starters lurking in your fridge. One I made from organic California grapes lovingly teased into fruition over 10 days some years ago. Another from rye flour that naturally ferments. And last fall’s brainchild, made from mountain berries plucked at 3600 feet. That last one yielded 6 lovely loaves and then promptly went into a funk.

But I’m going to be honest here: I don’t use any of my starters in this recipe. Every one of those starters is finicky and unpredictable at best, and when it comes to making bread, reliability is the key. So I’ve come up with a method that yields great sourdough loaves in a 3-day process. Very little attention is necessary until the third day, and the results are amazing. If you don’t have a woodfired oven, instructions on baking in a conventional oven are included as well. Go on, relax and make some sourdough!

 

Woodfired Sourdough Bread

 

Make 3 loaves, 23 ounces each

 

For the Starter:

2/3 cup rye flour

2/3 cup unbleached all-purpose flour

¾ cup cold water

1 teaspoon active dry yeast

Mix these together in a large bread bowl with the handle of a wooden spoon, scraping the sides clean as you go. Cover with a clean dish cloth or a loose-fitting lid and let rise in a cool place (55-60° environment) for 12-14 hours until frothy. I do this step in the early evening and let it go overnight.

 

First replenishment:

½ cup rye flour

½ cup unbleached all-purpose flour

3/8 cup cold water

Add these to your starter to ‘feed’ it in the morning. Scrape the sides again, put on a loose-fitting lid or a piece of plastic wrap and let it sit in a cool place for another 10-12 hours.

 

Second replenishment:

1 cup unbleached all-purpose flour

½ cup cold water

Feed the starter again, this time with wheat flour only. Let sit covered in a cool place for 10 hours or overnight.

 

Make the dough:  By morning, the starter should be bubbly and somewhat risen. It will also smell sour, which is the smell of active lactobacillus fermenting in the mix. This is good. Now add to the starter

2 cups of water at 105°

½ teaspoon of active dry yeast

4 cups of unbleached white bread flour (I use Pendleton Mills ‘Morbread’ with 12% gluten)

3 teaspoons of salt

2 Tablespoons of flaxseed meal (optional)

Mix the dough well, scraping the sides of the bowl to incorporate all the ingredients, and then knead for 10 minutes on a lightly floured surface. Return the dough to a clean bread bowl, cover and let rise for 5 hours at room temperature (68-70°).

Deflate the dough, turning it over as best you can and leave to rest for a further 1 to 1½ hours before shaping into loaves.

For Baking in a Woodfired Oven: For best results, bake this bread in an oven that has been heated for 2½ hours by a medium-sized active fire. In the last hour, move the fire from side to side to allow even heating of the floor tiles. After this time, move the active but non-flaming coals to the back, throw on a fistful of hardwood twigs and sweep the floor clean of ashes. Once the twigs have finished burning, you’re ready to bake the bread.

For Baking in a conventional oven: Line the center rack with quarry tiles or a pizza stone and preheat at 450° for at least half an hour. When the loaves are ready for baking, drop the heat to 400°.

Form the loaves / final rise: Turn the dough out onto a lightly floured counter and divide the dough into 3 equal pieces. (note: if using a conventional oven, you can only bake 2 at a time; put one of the pieces back into the bread bowl for another hour.) Form a ball with each piece by stretching the longest skin of dough across the surface and tucking it underneath.

Line 3 baskets with cloth napkins or dish cloths, and sprinkle generously with flour. Plop the dough balls into these, toss on a bit more flour, cover with the corners of the cloth and let rise for 1¼ hours in a warm place.

Once risen, turn the unbaked loaves onto either a wooden peel or the back of a cookie sheet sprinkled with cornmeal. Brush loaves lightly with an eggwhite mixed with 1 Tablespoon of water and slash as desired.

For Baking in a Woodfired Oven: Slip the unbaked loaves into the oven in a semi-circle about 12” away from the coals. Close the door all the way and bake for 1 hour, turning several times to bake evenly. Loaves are ready when the crust is medium brown.

For Baking in a conventional oven: Slip loaves 2 at a time directly onto the tiles or pizza stone. Bake for 20 minutes at 400°, lower the heat to 350°, and bake for another 40 minutes, turning the loaves as necessary to ensure even baking. Loaves are ready when the crust is medium brown.

how to choose fire clay for a bread oven dome

Last year I made a dome for my kiko denzer style bread oven using earth I dug up out of new garden areas.   I was able to bake all summer but ultimately there wasn't enough clay content and the dome slowly but surely crumbled.   This year, I would just like to bite the bullet and buy clay.   I found a local clay supplier but they sell dozens of varieties of clay and 7 that are labeled fire clay.   Before I call and start asking them questions, I would like to know what I should be looking for in a fire clay.   The supplier is called Portland Pottery.   Their fire clays are named Goldart, Hawthorne 40 mesh,  Hawthorne 50 mesh, Lincoln fire clay, Pyrax, Pyrotrol, XX Sagger.   Also, in their pictures, it looks like they are selling clay in big sacks, which makes it look like the clays are dry.   That seems good to me, since I will need to mix it up with sand and water and starting with dry clay seems like it would be easier.   Is anyone familiar with these clays and/or have any experience building a dome starting with dry clay?   Thanks so much.  -Varda

I normally use my starter weeky but  bought bread for the past 2 weeks. When I got the stater out of the fridge it hadn't risen at all & smelled more acidic than usual. I fed it twice and got no rise and also noted a change in texture; slimey and gelatinous -kind of the way chewing gum goes if you have some food in your mouth.

The last time this happened, the bread I used it in got stickier the more I kneaded it. I was told by the kind people at KAF that I probably had a protease problem. I made another starter which has performed very well till now.

I've now refreshed  tiny amounts of the starter 4 times with no change.

Diagnosis? Advice?
