My wife fried up some fresh plantains as a nice accompaniment to dinner the other night.  Since she made too many I figured I would try adding some to my next bread.  In retrospect I think it would have been better to boil some plantains instead of using fried ones but overall the bread turned out pretty good.  I can say that the plantains are certainly not overpowering and add a nice flavor and texture to the final bread.

I used my standard stock AP starter and added some Durum, Oat, First Clear, Spelt and White Whole Wheat flours to the mix along with some olive oil.  The overall hydration of this dough is 68%.

Starter

71 grams Seed (Mine is 65% AP Flour Starter)

227 grams AP Flour

151 grams Water (85 - 90 degrees F.)

Mix seed with water to break up for a few seconds and then mix in flour until the starter forms a smooth dough consistency.  Put it in a lightly oiled bowl and loosely cover and leave at room temperature for at least 10 hours.  The starter should double in volume.  Put the starter in the refrigerator for up to 1-2 days or use it immediately.

Main Dough

Ingredients

425 grams Starter from above

180 grams Bread Flour (KAF)

100 grams Durum Flour (make sure not to use Fancy Semolina as it is too gritty)

100 grams Oat Flour (KAF)

150 grams First Clear (This is used in Rye breads but I like the crumb this helps make in other breads as well)

75 grams Spelt Flour (Bob's Red Mill)

50 grams White Whole Wheat (KAF)

195 grams Plantains (Fried, or boiled and mashed)

395 grams Water (85 - 90 degrees F.)

16 grams Sea Salt (or table salt)

10 grams Olive Oil

Procedure

Mix the flours  with all the water except for 50 grams for 1 minute.  Let the dough rest covered for 15 minutes to 1 hour which will allow the flour to absorb the water.    Next add the salt, starter, oil and mashed plantains.  Mix on low for 1 minute and then add the remainder of your water unless you feel the dough is already too hydrated.  Mix on low-speed or by hand for 4 minutes.  Remove the dough from your mixing bowl to your work surface.  The dough will be very sticky so you may want to use a bench scraper to help you do 4-5 stretch and folds.  Leave the dough uncovered for 10 minutes on your work surface or put it in a slightly oiled bows.  After 10 minutes either on your work surface or in your bowl do another stretch and fold, cover the dough and let it rest for 10 minutes.  Repeat this S & F procedure one more time and let it rest another 10 minutes.  Do one last S & F  and put the dough in a lightly oiled bowl for 2 hours.  If you don't feel the dough has developed enough feel free to do some additional stretch and folds while the dough is in the bowl and then put it in the fridge overnight.

The next day when I returned from work I removed the dough from the refrigerator and  I let the dough sit out at room temperature for 1.5 hours.  I then formed it into loaves and put them in floured bannetons and let them rise covered for 2 hours.

Score the loaves as desired and prepare your oven for baking with steam.

I then baked on my oven stone with steam at 450 degrees until both loaves were golden brown and reached an internal temperature of 205 - 210 degrees F.  I left them in the oven for 15 minutes with the heat turned off and the door open a crack to get the crust a little harder.

I have been wanting to do some whole rye and whole wheat SD baguettes that has at least 20% whole grains.  I wasn't going for holes but for taste.  The starter was a Rye and WW one as well.   I also told teketeke that I would try her baguettes she makes with YW and I am becoming a real YW convert  Since her baggies are YW using white flours, this doesn't qualify for doing hers yet but I didn't want her to think I had forgotten. The SD is nice and sour and YW is not.  Both have the same moist crumbthat is fairly open for so much whole flours.   I am OK with the slashing and know it could have been worse. :-)  The YW did spring slightly more.

Method was the same for both.  Levain build in 3 stages over 12 hours and then retarded in the refrigerator overnight.  The next morning the levains were allowed to sit out on the counter for 1 hour to warm up.  The entire levain was placed in the mixer with half of the flour, 75% of the water and the rye malt.  This is mixed on KA 4 with the wisk for 4 minutes.  Then it autolysed for 30 minutes covered.

The rest of the flour and water is added and the dough hook goes on to knead for 4 minutes on KA 3.  Then the salt goes in and you knead on KA 3 for 2 more minutes.  The dough goes into a covered and oiled bowl to rest.  5 S& F's are done on an oiled counter 4 times every 15 minutes.  The the dough is formed into a ball and sits in the covered oiled bowl on the counter for an hour and half before going into the fridge for 22 hours. 

The next morning the dough sits on the counter for 1 1/2 hours to warm up and then is shaped, placed in a floured couche and then into a plastic bag for final proofing.  Mine took 3 hours. 

Preheat at 500 F regular bake with stone and steam in place.  Slash the baguettes and put into the oven to steam for 8 minutes.  Remove steam, turn down to 450 F convection and bake for another 8 min or so until done.  Here are the formulas.

In gratitude for all of her help in my yeast water bread quest, I created a YW bread named for Akiko,  that would be fitting for her graciousness, generosity and skill.  I made this bread today and it is everything I would want in a YW bread if it were to be named after me but, she is the one stuck with it now  :-)  Thanks again to Akiko also known as teketeke at TFL.  A great YW bread named after a great lady.

teketeke Bread - Japanese White Whole Wheat, Orange, Apple, Turmeric, Seeded YW Bread

 Levain:

 KA bread flour - 75g

KA White WW flour – 75g

Yeast water 115g

 Total levain build 265g – at 80 F

 First build - 25g of both flours and 50g yeast water.   Second build 4 hours later - 25g each flour and 65g YW.  Third build 25g of both flours = stiff levain.  Let sit 4 more hours.

 I use Mandarin, Minneola Apple Yeast Water 2 days after refreshing from the refrigerator and reserve the apple and orange solids for the bread.

 Final Dough

 KA bread flour - 200g

KA White Whole Wheat - 100g

Water - 75g

Orange Juice - 80g

Egg yolk - 1

Whipping Cream - 60g

Sugar - 6g

Honey -6 g

Butter - 29g

Salt - 6g

2 tsp each Nigella, chia and basil seeds (hanseata’s contribution)

¼ tsp turmeric – for color

Apple and orange solids, patted dry with paper towel,  from the previous YW refresh 2 days before levain build began.

 Method:

 Make the levain - for 12 hours at80 F

 In stand mixer - mix the final ingredients, except the salt and reserved YW solids, with paddle at #2 - Autolyze for 30 minutes.

 Add the salt-- knead with dough hook starting on #2 and moving to #3 and #4  until the gluten develops to window pane stage for about 8-10 minutes.  Flatten, do S& F while incorporating the reserved YW solids into the dough.  Shape into ball and transfer to an oiled bowel and cover with oiled plastic wrap.

 Bulk ferment: 3 hours at 80 –82 Funtil the dough at least doubles.  Do one S &F at 30 and another at 60 minutes.

 Pre-shape fermented dough into ball and let rest 10 minutes.  Shape into loaf and place in oil sprayed 4 ½ x 8 ½ x 3 Pyrex loaf pan.  Cover pan with oiled plastic wrap.

 Proof:  2-6 hours at82 Funtil the dough at least rises up to the top of the pan.

 Preheat oven to450Fwith a loaf pan half filled with water and a12”cast iron skillet in the bottom of the oven and a stone on the next rack level above for 45 minutes.

 Decrease temperature to400F, throw a ½ cup of water into the cast iron skillet place bread into oven and bake for 12 minutes.

 Take out steaming apparatus, rotate loaf 180 degrees and bake for another 12 minutes.

 Place probe into the middle of the nearly finished loaf from the side and bake until the loaf hits205 Fturning 180 degrees every 4 minutes.  The loaf should be done in 28 minutes or so.  Turn off oven, take loaf out of pan, crack oven door open, place loaf back on stone and let the loaf sit in oven for 10 minutes more to crisp the crust.

 Remove loaf from oven and let cool to room temperature, about one hour, on a wire rack.

It has been hot here, and doesn't always seem like the right time to make bread, but this morning it was almost chilly, and before long the kitchen warmed up to 76degF.   A perfect day for pain au levain.  I recently rediscovered King Arthur White Wheat flour and decided that should have a role, as well as having gained a fondness for Arrowhead Mills stone ground whole wheat.    Mixing flours always seems to bring out the best of both, so there's no need to choose.   I went back to my teacher, Mr. Hamelman,  and followed his procedures if not his formula.   They are so straightforward and powerful.   After banging my head against the yeast water wall, it was fun to step back and make a simple pain au levain.

Hopefully next bake will be in my newly rebuilt wood fired oven, which is drying as we speak.

Mix all but salt.   Autolyze 1 hour.  Add salt.  Ferment for 3 hours with 2 S&F.   Cut and preshape.   Rest for 20 minutes.  Shape and place in couche.  Proof for just over an hour.   Bake at 450F for 20 minutes with steam, 25 without.

I actually put this together, meaning to for a while, after dmsnyder mentioned Suas's whole wheat. This is my first try at a truly 100% whole wheat bread and both Adam, my husband, and I think it's a keeper, but with one change: it needs more honey.

Soaker

  • 200g whole wheat flour
  • 115g white whole wheat flour
  • 35g gluten flour
  • 260g milk

Biga

  • 200g whole wheat flour
  • 150g water
  • 5g instant yeast

Final Dough

  • all of the soaker
  • all of the biga
  • 50g butter
  • 55g honey (we think that 80g would have been better)
  • 12g salt
  • 25g milk

Method:

Put soaker ingredients together in a bowl and thoroughly combine. Set aside. Put biga ingredients together in a bowl and thoroughly combine. Place plastic wrap over both bowls and let alone for an hour or so. Mine went for a little over since I was feeding Alexander at the time.

To mix the final dough, break both the soaker and biga up into small pieces and place into the bowl of a stand mixer. Add all other ingredients and mix on low until everything is incorporated into the dough, then medium-low for 3-4 minutes until the dough no longer sticks to the sides of the bowl. Place in a bowl for bulk ferment.

During bulk ferment I did 2 letter stretch and folds. I don't really think I needed to as the dough seemed to be very elastic, but I wanted to be sure. Allow to double after the second stretch and fold if you decide to do it. Overall, the dough got a 2 hour ferment.

Cut into two pieces and shape into loaves. This worked for 1 loaf sandwich bread and about 4 rolls. Baked at 350 degrees for about 30 minutes, then went down to 325 for 10 minutes. I took the rolls out before turning the temperature down.

This is soft, light, and perfect for sandwiches. Both my husband and I like the fact that it isn't too heavy, yet it's 100% whole wheat. Considering the fact that none of my projects have been going completely right lately, this success (and one other that I'll mention on my other blog once I've figured it out *without* it being a slight accident) makes me feel good again.

Now I think I can tackle David's San Joaquin Sourdough. ;)

Clint is doing well. Tried making a sandwich bread using sourdough starter. Heres what I did.

2 Nights before:
Added about a cup of whole wheat flour and half a cup of water to half a cup starter (100% hydration)

Day 1:
Added a cup of whole wheat flour, a cup of white whole wheat flour and a third cup of AP flour, 1.5 cups of water, 2 tsp salt, 1 tablespoon each butter and sugar.

Steps:
1. Mixed flours and water to get a shaggy dough. Rest for 30 mins (autolyse)
2. Added salt, butter, sugar and kneaded 8-10 minutes till the dough windowpaned.
3. Rest. Phew.
4. Bulk ferment for 90-120 minutes or till the dough doubles in volume, with stretch and folds every 30 minutes.
5. Shaped and stuck into a loaf pan.
6. Day 2. Pulled dough out of fridge and kept at room temperature for 2 hours. Baked at 375 for 40 minutes.

Results:
Soft and pillowy. Good crumb and rise. However, my shaping skills suck. Need to develop a feel for tension in the dough. Looked a bunch of YouTube videos but need to develop a better feel. Also want to try this with whole wheat flour instead of the white whole wheat. Just a personal taste preference.
