HAGGIS EN CROUTE, USING BRIOCHE - WITH SUNFLOWER OIL (VEGAN)

I've been meaning to make a vegan brioche ever since I learned it could be made with olive oil instead of eggs and butter. And, with Christmas dinner coming up, I wanted to use such a dough to make a vegan haggis en croute. 

And, if olive oil could be used, why not sunflower oil?

Soda bread calzone - done in thirty minutes, or so

Made a couple of these, today - one using self-raising white flour for my daughter, and one with wholemeal bread flour and baking powder for myself.

It's a simple matter of knocking up a quick soda bread, rolling it out flat, covering it with the filling of your choice, folding it over and frying both sides in a dry frying pan (covered). 

Simply gorgeous!

New GF Vegan Book: Gluten-Free and Vegan Bread by Jennifer Katzinger

I just received the new book "Gluten-Free and Vegan Bread, Artisanal Recipes to Make at Home" by Jennifer Katzinger.  A quick review after reading from cover to cover:

- the recipes use an varied array of nutritious GF flours, from millet, teff, buckwheat to almond and coconut flours.

Vegan pasta - without a machine

Nobody told me just how easy making your own pasta was. Or if they did, I wasn't listening.

No special equipment, no special ingredients - just bread flour and water (and a little EVOO - just 'cos I like the stuff!). What's more you can flavour it anyway you like.

Now I've tried it, I can't see me ever buying the dried stuff again. I've discovered you can set to and make pasta in the time needed to boil a pan of water and cook dried pasta. 

And now I've got my nine-year-old granddaughter making it:

A simple North-country parkin - with no eggs, milk or butter

As a vegan, I'm constantly on the look-out for recipes I can alter to suit my requirements. I was very doubtful I could do this with the parkin of my youth (Lancashire, as it happens, but Yorkshire also lays claim to this recipe - which is why I've called it North-country), but, after the success of my vegan chocolate cake, I thought I'd have a go - and, it turned out absolutely gorgeous (just like my chocolate cake)!

looking for reliable vegan recipes for cookies, brownies, etc.

I will be doing a bit of baking for a vegan family with children.  If someone has good recipes to share, or good websites to refer me to, I would appreciate it.  There is a lot of stuff on-line, and am trying to find recipes that are sure to work.  I am thinking about baking some muffins, cookies, maybe some quick breads, brownies, etc.
