Using a straight razor for a lame?

March 8, 2012 - 6:23pm -- Felila

My pack of old-style razor blades is used up and I'm hunting for another place to buy blades to use as lames. A Quattro cartridge is of no use as baking equipment, but multi-blade cartridges is all the local supermarkets seem to carry.

I wondered if there was such a thing as a lame that could be resharpened and used indefinitely and then realized: of course, a straight razor, as used to be standard male equipment in past centuries, before Gillette and the razor blade.

Has anyone here used a straight razor as a lame? How did that work? Was it hard to find a razor?

safety snafu - don't try this at home

I was shaping some dough when I thought I'd kicked the corner of my baking table and felt a sharp pain. Turns out, my scoring lame was on the floor, and it had just sliced into the outer part of my foot about a third of an inch deep and an inch long. As Anthony Bourdain would put it, most of the pain came from the knowledge that I'm an idiot (for not storing it securely).

Storing razors

April 30, 2008 - 11:39pm -- einarfa

Hi.

To those using razors to cut their breads, how do you store your razors to avoid accidents etc.? I suppose you don't keep them just lying around between use. That said, my razors tend to be quite sticky with dough. How do you clean your razors and do you store them in some kind of liquid (oil?) or something to prevent this?

Einar.
