I just received Whole Grain Breads by Peter R., and I saw a recipe for Pain Meteil. I would really like to make this, but I'm looking for a recipe that does not use 2 pre-ferments, but only one. I know there is a recipe in the classic work "Village Baker", but I never had a much success with it. I want to be able to bake several loaves at a time, and P.R.'s recipe just looks too labor intensive.
Does anyone have a good recipe for Pain Meteil using only 1 pre-ferment?
