Great River Organic Flour


Hello

I was recently contacted by one of the members of this site inquiring about 00 flour.  Great River Organic Milling Company produces a wide variety of flour most of which are stone ground whole grain flours.  All of our flours are available on Amazon.com at very reasonable prices because of the fantastic shipping rates available. Often free shipping. Anyway I don't mean to write a commercial here on the site but was encouraged by a member to let you all know.

The inquiry really centered around what flour we have that may be comparable to a 00 flour.  The answer is this; we produce a whole wheat pastry flour made from soft white winter wheat.  It is a fairly fine grind and we sift off much of the bran.  The protein on a 14% moisture basis will run between 8-10%.  The flour is a lite cream color.  It is not white flour because it still contains portions of the germ and bran. There is a pdf file on our website titled specialty flours that describes the flour and lists the nutritional facts as well.

We sell a great deal of this flour to Artisan pizza makers and those that do brick oven pizza.  It makes a nice crust.  It is excellent for quick breads and cookies and pie crusts.  Of course I am the owner so I have nothing but good things to say about our products so I encourage you to look at others who have reviewed our products on Amazon.

Central Milling aka Keith Giusto Bakery Supply (Petaluma, CA) has moved

Just made a trip out to Central Milling, which is actaully called "Keith Giusto Bakery Supply". They have moved into a new location. 755 Southpoint Blvd, Petaluma, CA. 866-979-2253

They have a very large selection of organic bulk flours. Now, you can call ahead, and they will pack 5lb bags. They ask that you please call ahead though, otherwise, you will wait for some time. If you are buying in 25 or 50lb bags, no problem.

Under construction, is a Bakery School, on site, that will be open soon.

Please email me your contact, if you are intersted in bulk flour. We were told that if enough of us order, they will deliver to SF, as they deliver to the Ferry Bldg twice a week.

What if the label says organic but...

What if the label says organic but the bakery you know and trust couldn’t source 
any organic flour that week? Do you have an expectation of being informed before 
you purchase a loaf? If you knew, would you wait a few days until they could buy 
organic flour? Since the flour that week costs the bakery less, would you expect 
to pay less?   
 
As a customer I expect any bread I purchase will have a correct label on the 
wrapper. If that wrapper says organic flour then I expect an organic product. 
Especially if I’m seeking that specific product and paying an extra few dollars. 
 
As a former bakery business owner, however, I understand the disruption in 
business if signs must be posted and customers are upset. And what do we use 
instead of all those pre-printed bags claiming organic ingredients? 
 
I ask this question because my students have worked in established organic 
bakeries and have seen this happen. We talk about ethics and mission statements, 
since these students are looking for guidance in starting their own businesses. 
I have offered suggestions based on the size of the business: small bakeries 
post signs while larger wholesale bakeries add a disclaimer to their bags with a 
phone number or email address for further info. 
 
I’m curious about your opinion to this very touchy question.

King Arthur equivalent in Canada

I have moved from the USA to Victoria, BC. Its beautiful here and I love it. However, I haven't been able to source King Arthur bread flour. I'm buying a bread flour from the local bulk food store. Its OK but not great. I've looked at the Robin Hood bread flour but its bleached. I'm really trying to find an outstanding organic white bread flour. Does anyone have any suggestions. I'm on Vancouver Island.
