Kitchen Aid Stand Mixer

Using a Kitchen Aid Standmixer to make bread... having problems, need advice!

Hi,

I'm trying to use my kitchen aid standmixer to kneed my dough.. however, it seems that no mater what I do the dough always primarilly sticks to the side and bottom of the bowl and only a small portion actually gets kneeded. Usually at this point, I take the dough out of the bowl and kneed it by hand; however, this is time consuming. I'd much prefer to leave it in the stand mixer to finish kneeding. Is there something I can do to stop this? is it normal? do I just add small amounts of more flour?

Quick Question...

Just got my new Artisan mixer and tried my first loaf.

Rye bread. 5 minute method etc.

mixed the flours and other dry ingredients first with the whisk.

changed to the dough hook then added the water and molasse and mixed.

 

it wouldnt mix all the way to the bottom.

what did i do wrong? i would scrape it down and it would help.

if i sped it up ( I mixed on level 2) it would bring up some more of the flour.

I have a nice Kitchen Aid stand mixer. I have one of the new scrapping paddles and a dough hook. Almost every recipe I see says kneading by hand. I dont have an issue with this and would love to learn more about it but I cant seem to find a recommended method to use this Mixer. Can someone point me at a good post on how to substitute the stand mixer into baking bread.
