Making a Sourdough starter with water kefir

I have neglected my sourdough culture in the back of the fridge and it looks and smells beyond recovery! I have water kefir (sugar, water & kefir grains/culture) which I regularly ferment for a probiotic drink... can I use this to make a super quick sourdough culture - e.g. mix flour and water kefir and leave overnight??? I have never made my own culture before. Has anyone done this using water kefir and how would you go about doing it?

Here is my experience with kefir as a component used in sourdough bread making.

Summary:  When adding kefir milk/curds/whey to my typical slow-ferment (no-knead) bread dough recipe, I find the quality of the gluten to be degraded: the dough tears more than stretches compared to if I use plain water instead. I suspect that proteases present in the kefir are cleaving the gluten strands.

Does anyone grow & use kefir...I've been growing it for 10 years, or's a wonderful product & it's very easy to grow!   I've made "cream cheese" & "sour cream"'s a wonderful substituted for buttermilk in baked goods & I've made sourdough starters with it.  If you'd like to know more about it, I recommend this site: it's everything you'd want to know about kefir!

I bought my kefir grains from Dom, I'm not sure if he still sells them, but the above site will tell you.
