I was looking for a recipe for a whole wheat bread that would taste something like the rolls they used to serve at The Good Earth restaurant, a health food chain that used to exist in California. I couldn't find anything that looked right, so I made something up. It turned out excellent (though, if anyone can find a recipe for the original Good Earth rolls, let me know).

Using the amounts in brackets should theoretically make one loaf with approximately 70g fibre. Forgive me if I got the percentages wrong; I'm still trying to switch from measuring in cups. A recipe and a description of how easy it was to make these below. Submitted by Floydm on January 28, 2005 - 3:10pm Maple Oatmeal BreadWe tried this one this week. It was very good, and made incredible toast. Maple Oatmeal Bread Makes 2 loaves 2 1/2 cups boiling water Put the oats into a bowl. Pour the boiling water over the oats and set aside for an hour. Mix the yeast, syrup, salt, and oil into the oats. Mix in 3 cups of the flour. Cover the bowl and let rise for an hour. Add more flour, 1/2 cup at a time, until the dough is the correct consistency. Knead for 10 minutes. Cut the dough into two pieces, then shape it into loaves and place in greased loaf pans. Cover and let rise another 45 minutes. |
