Dough- freeze or refrigerate for baking later?

I've only made bread straight through.  I have 2 questions about prepping dough and baking it later:

1) What are the stages for baking bread during a work week?  Is there a way to break it down to do what ever needs to be done in the morning and at night?  I just got a KA pro 600 and am thinking of trying to make bread during the work week as I want to get my practice in.

Hello... I am a beginner, but have made Taste of Home's Santa Bread several times. I use frozen dough, a 1 lb. loaf. I'm wondering if I can freeze the Santa Bread right before the final baking stage, and have it still come out ok. Or, can I freeze it after baking with good results? Thanks so much for your opinions!

Anyone has experience with half baked frozen dough ? What do I mean ? can I half bake my ...let's say baguette, then freeze it. When wanting to eat, just pop into the oven to finish the bake.  I see them in the supermarket, so it should be possible... Question is, WHEN to stop the bake...
