King arthur flour

I found a store about half a mile from my house that caries King arthur AP and 100% red wheat flour for 3.16$ per 5lb bag. Is KA a good brand? should i replace my Goldmedal AP flour with KA flour? I follow the Artisan bread in 5 a day and healthy bread in 5 a day, but i have been using goldmedal for this process. Will the red wheat KA flour work as a replacement for goldmedal whole wheat?

Where to buy King Arthur Organic Unbleached Flour wholesale in Los Angeles?

Hi, I'm starting up a small business creating an all organic pancake mix. I live in the Los Angeles area and am looking for King Arthur organic all purpose flour at wholesale in size larger than 5 lbs. Ideal would be 20 or 25 lb. bags. Any help would be appreciated.

Un-Enriched Flour in US?

This is a two-fold question.

1. Is flour in France Enriched?

2. Is it possible to get unenriched flour in the US? If so, where?

Suffer from IBS and can't really eat bread here in the US but when I went to Paris I ate bread and felt amazing. Dr is guessing it's the enriched flour here in the US. I am all for making my own bread as I LOVE to cook but have realized ALL flour seems to be enriched and some don't say they are but are. Help would be greatly appreciated.

Baguette is not white - why?

I've been trying baguette for a few tries,  I finally seem to get it right,  the shape,  the slashing,  the crumbs.  But my baguettes are not white.  Why?  I've been using Gold Medal AP flour,  German brand 550,  Gold Medal Bread Flour,  all of them did not turn out the baguettes that are white.  What might have gone wrong? or is it the flour?
