Focaccia or Ciabatta


What is the dirrerence between Focaccia and Ciabatta? I am not French or Italian so please forgive my lack of knowledge, but I was not raised in a big city with a lot of ethnic or artisian bakeries.  I just baked my first Focaccia (onion) and it was a big hit. Then today I see a Ciabatta formula and wonder whats the difference they both seem to be a yeast flat bread. Thanks in advance for any help and information.

Making Yeast Breads (or any breads besides flat) on the stove

Hello -

I am currently not being able to use an oven, as my family just moved into a new house and it only has a stovetop. We are hoping to get an oven, but I was wondering if anyone knew if bread could be made on it? I make tortillas and I will be making matzah, which is similar to tortillas, and cooking them on the stove. But I want some yeasted breads.

Any help would be appreciated. :)

BBQ/Grilled bread

Are there any types of bread you can cook directly on a grill/bbq without using the BBQ as an oven. I figure there must be types of bread in some cultures that have some nomadic roots that do this as who is going to lug about an oven.

I don't care about authenticity more that it's always good to have freshly cooked bread with a BBQ and cooking it on the same grill would be handy.

I imagine that you need to use a flat bread so it cooks fast so something along the lines of pita breads might be an option.

Has anyone tried it? can you cook directly on the bars of the grill or do you need a flat surface?

Bread For All

Bread and all of its manifestations. That's what this blog is about. Particular emphasis is upon earth ovens, sourdough bread baking and flatbreads. Viva Tortillas!


Well, if I had had my druthers, I would have been in San Diego for the meet.  After all, I was in Ensenada, which is pretty close.  Compared to Kansas City, that is.  But, no, I couldn’t get away from work for a fun Saturday with other TFL-ers.
