I'm an organic vegetable farmer near San Juan Bautista, Ca. with a penchant for grain growing and whole grain sourdough bread making. In past years the wheat I've grown hasn't shown to be that promising for bread making, but this year's crop of white wheat looks good, it tested at 13% protein and shows great gluten. I've had some ground into flour, so far it's in the 50 lb bags the mill packed it in. I'm looking for local bakers that want to try it out.
