Trying to figure out whole grain substitutions for flour...

Hi, all!

I just got a Komo grain mill (LOVE IT!) and now I'm trying to figure out what grains to use for the flours that I'm used to.  I have Prairie Gold white whole wheat berries and soft wheat berries (along w/kamut & spelt).  So far I've been using a 40/60 soft wheat/white whole wheat berries to replace AP flour.  What would I use for a recipe that calls for bread flour?  What would work for whole wheat pastry flour...the soft wheat berries? 

I appreciate any thoughts and suggestions!

LDS Church sells bulk wheat?

Well, I've been looking into buying bulk wheat berries and haven't found many great options online. Besides high shipping costs, the price of the wheat often doesn't seem that great. I just stumbled across a new possibility, on the online store run by the LDS church. They sell a box of six 10-pound cans of hard red winter wheat for only $28, with free shipping. It's a little weird that it's in cans, but I guess that's not a problem. Here's a link:

Coops and Places to buy Whole Grains in or near Portland Oregon

Hi all, I did a search for coops in the Portland area through the TFL search engine, but could not find any threads.

I live in Newberg Oregon about 19 miles from Portland and close to Salem.  I am looking for good places to buy Whole Grains in bulk.

Does anyone who lives in or near Portland know of a coop or grain supplier with clean, high quality grains that is reasonable in price?
