Bosch Universal Mixer Whipping Cream Cheese

Sooo, I really LOVE my Bosch Universal mixer - it does exactly what I bought it for when it comes to my bread mixing.

HOWEVER, last night I used the beaters for the first time to whip some cream cheese, and I was very disappointed how the beaters don't reach all the way down to the bottom of the bowl. I was making a "cheesecake" to use up a Graham Cracker pie crust I had bought by accident (don't ask), and even though I scraped down multiple times during the mixing process, there was still some cream cheese stuck to the bottom of the bowl when I emptied the mixture into the crust.

Is this something I need to live with (in other words, use my Kitchenaid for), or is there some sort of "fix" for it?

TIA,

Stephan

3 qt bowl for Hobart C-100 10 qt

I have 3 small bowls for the 10 quart Hobart C-100 or C-100T mixer (Old Style).  These are the bowls that fit the 3 quart adapter that went with the earlier 10 quart Hobart's C-100 model.  I also have one 3 quart adapter.  I recently purchased an old C-100 mixer that came with the 3 quart adapter and the 3 bowls but I do not have the 3 quart attachments required that go with this 10 quart mixer.  Looks to be about 40 years old would be my guess.  Heavy Stainless Steel bowls just like the 10 Quart bowl but smaller.

I would like $30 for each piece.  All are in good shape for their age.  The adapter is rusted and in need of paint but works perfectly.  If you own a C-100 mixer and you are interested reply to this message or contact me at "elwil at verizon.net".  You will have to already own or find the 3 quart attachments to use these items.  I live in Richmond, VA but can ship them if you are willing to pay shipping.

KA Professional 600 Bowl slipping off the tab in the back?

Anyone else had the problem of the bowl slipping off that little tab in the back that you pop it into before you raise the bowl? Don't exactly know what to do about it and I can't get bagel dough to knead properly unless I figure it out. I'm okay with doing something myself, but I can't think of anything that would work. Extending the little metal piece that pops into the tab would be my best guess as to what to do, but I'd have to find someone to machine the little part and then put it on for me. Worst case there, though, is that I'd have to buy a new bowl if it didn't work.

Suggestions welcome. It didn't even really get warm kneading the small amount of bagel dough I had in there, so I know that it's fine with small amounts. Just need to figure out this one problem...so that I don't have to stand at the mixer and hold the bowl on. :)

Trouble removing bowl from KitchenAid after kneading

This keeps happening to me, but nobody else has mentioned it.  I haven't mentioned it, either, so that doesn't mean much.  And it happened again last night.

I have a KitchenAid Classic, 4.5 quart bowl.

When I finished kneading some bread dough, I had trouble removing the bowl.  The kneading action tightens the bowl, and I spent ten minutes trying to remove it.  I even wrote myself a note before I began this time about which way to turn the bowl to get it off later.
