That’s right.  I’m one of the few people who can truthfully say they were born losers.  I am a twin and the second one born.  So, I managed to lose the first race I ever ran and was born in 2nd place – the worst kind of loser.  Luckily, I can’t remember much about my horrible awakening to the outside world that day so long ago, another loss I suppose.  Maybe I’m double, double born loser though.

That’s right a second time.  It is not the end of the terrible two’s that day.  I was also born on the 2nd day, of the 2nd month in a year that was 2 years past 1/2 a century.   I mean there ought to be a law that limits how many two’s a twin can be stuck with on one day don’t you think?

I would love to have back all the money I have bet on 2 and 22 over the years - roulette, lotteries, sports, etc.  #2 has never been kind to born losers like me, but that doesn’t stop us from trying to make it our lucky number.  We are eternal optimists and think things will change after all these years of suffering.  We think we will wake up from this bad dream and be born first and the number 1 has really been kind to us.  But no – it isn’t so – at least not yet.

So to celebrate, at lunch today, my wife and I split a 2 cheese, 2 bread and 2 meat panini with 2 homemade kosher dill pickles and 2 hot condiments, salsa verdi on chips and pickled jalapenos sans seeds.  The 2 breads can be found here :

Multi-grain Sourdough Chacon with Olives, Sun Dried Tomato, Garlic, Rosemary and 2 Cheeses

We split one of the 2 sandwiches in two to make 3 sandwiches since I was going to eat 2 of them and there was no really good reason for my wife to go hungry again this time.  . My wife lit 3 candles, one on each sandwich representing one for my brother and 2 for me since I am twice as good him on my worst day – which can be pretty bad come to think about it.

He always was and still is - the Evil Twin.  Most people don’t even know there is always an Evil Twin but, take it from a real Born Loser, you are twice as likely to be the Evil Twin if you were unlucky enough to be born first on that day - a day of too many twos.  Yes, I guess I’m saying my twin is a real Double Doofuss of the Twofuss! 

Happy Birthday Brother - still thinking of you often and kindly but why…. we can’t remember, even though we do forget and forgive at least as easy as any other Born Loser is likely to do – when celebrating the worst day we can remember J

Tonight we will have the panettone birthday cake that is oddly cut in two, with 2 candles.  One candle is for the Evil Twin; the Double Doofuss of the Twofuss and the other is for the Born Loser.

 

I suppose there could be a sadder tale out there somewhere but, it I think will be difficult to duplicate The Tale of Too Many 2’s for Twins.

So this year my son turned 10, and he requested a cake that was all sorts of "half-and-half".

Half of his cake, he wanted "hockey" themed. The other half, he wanted "warrior cat" themed. (He's been reading a series of books about fighting cats)

And he wanted strawberry AND chocolate cake as well.

I wasn't up for making a layered cake, so I asked if he'd take a strawberry cake with chocolate chips in it - and then found myself having to make something up since I couldn't find anything that matched that description online. The boxed strawberry cake mixes from the store are pretty...meh.

So I found a bunch of strawberry cake recipes that called for a white cake mix and a package of Strawberry Jello, or I'd find ones that were totally from scratch that had crushed berries in them but which weren't pink, so I decided to go with something in between since I'm not fond of the boxed white cake mixes and wanted something in between.

I am very pleased with this one, because I've never messed with a cake recipe that much before.  It came out very strawberry flavored, not too sweet, with just the touch of chocolate.

Pink Strawberry Chocolate Cake:

This is the recipe I came up with when making a 9x13 "hockey rink" cake:

I put some frozen strawberries in a ziplock the day before I made the cake, so they'd thaw before I made it.  Then for the cake, the first thing we did was to mash up those berries. This was a great job for the littlest helper who was excited to help make her brother his special cake.  The leftover mashed berries can be thrown in a container and used for smoothies later - bonus!

cream together:

  • 1 3/4 cups white sugar
  • 2 sticks of butter (1 cup)

then add:

  • 4 eggs
  • about a Tablespoon vanilla extract

when this was all ready, dump in and mix gently:

  • 3/4 cup of the mashed strawberries

mix the dry ingredients FIRST, and add to the batter mix:

  • 3 cups all-purpose flour
  • 3 1/4 teaspoons baking powder
  • 1 small package of Strawberry Jello gelatin mix (this stuff basically gives it that ice cream parlor taste, along with the crazy color)

And finally, after youve mixed all that stuff together, add in

  • 3/4 cup of milk
  • 1/3- 1/2 cup mini-chocolate chips (the mini ones were perfect for this!)

Fold it together and you're going to have some pretty shockingly pink stuff to cook with.

 Pour it into your pan, having greased the sides with some butter beforehand.

Oh - and I discovered an awesome trick which is kind of a "duh" but which had never occurred to me until I ran across it searching for recipes - line the bottom of your pan with parchment paper and your cake will be a snap to pop out of the pan! 

Bake @ 350 for 1/2 hour and then start checking the cake with a toothpick to check when it's ready (toothpick won't come out mushy) - mine took about 40 minutes.

THAT'S A PINK CAKE! Your house should be smelling pretty "strawberry" now.

Once the cake cools, it's time to frost:

Take

  • 2 packages 8 oz cream cheese  
  • 2 cups confectioners' powdered sugar in a mixing bowl, and whip with an electric beater until smooth. 

(*DONT DO THE NEXT PART UNTIL THE STUFF IS SMOOTH, or you'll end up having to "zamboni" your ice rink like I did and start a new batch because it'll end up all powdery )

Then add about 

  • 1 cup of heavy whipping cream and beat again until you have a spreadable consistency.

Decorate as desired, in my case, it was with a hockey rink and some printed card cut-outs of pictures of cats playing hockey. :)

Would you like to surprise your family or friends for their birthday? I do! It is not difficult but time consuming especially if you use multi-color chocolate.But it is worth it when you see their reaction!! That is a speechless moment that I really love to see.

This SpongeBob cake was for my daughter's 4th birthday. The pink and light blue spongecake was Gary. (SpongeBob's pet snail)   SpongeBob's left arm was broken because I didn't put enough chocolate on the back.

 For my my son's 12th birthday.( bakugan 爆丸) He was surprised, and smiled with a joy when he saw this cake. I forgot to put a little bit of white chocolate to color his eyes.

9/2/2010 I challenged to trace and paint Berry Manilow's face using  a bamboo stick for my sister-in-law's birthday.

 I messed  up  the shadow around his right eye. But my husband's sister was very happy. That made me happy too.
