We visited Nashoba Brook Bakery in West Concord MA and had a chance to see the oven - up close and personal. It was quite an experience. We do bakery tours for fun but this was the first time I ever got close enough to touch the oven. (Yes, it was hot.)

Hobby to Business

I have baked more or less daily for the last year and started to have consistent results at this level.

I am now considering to push this to the next level and start an artisan bakery. 

I am fully aware that jumping from a few loaves a day to a few hundred loaves a day or more is not a walk in the park, but I am trying to figure out as much as I can from what is actually involved.

I am planning on volunteering to an artisan bakery in a town nearby to get first hand experience.

Opening an artisan bakery

Hi everyone - I love this website!  My quesiton is "how to open an artisan bakery."  Or rather, is there any litterature or websites devoted to the artisan entrepreneur?  If I go this route, I'll certainly have to attend formal education like the SFBI.  I've orded "The Village Baker" - ironically, I used to live in Monterey, right next to Capitola but I wasn't bitten by the bread bug then.
