On a Trevor bender.
My baking has been a pretty dilatory walk through various approaches over the years, leaving great holes in my understanding. Of them all, having discovered the Rubaud technique through Trevor, his site, videos and truly excellent book, I'm finding so much pleasure in slowing down and focusing on a method, staying close to Trevor's work as guide. It's my hope this time through won't be so rambling.

He got a little snagged on the peel on the way into the oven-- so slightly flatter than usual and lost his ear-- but still happy with it
My first sourdough loaf!
HI, I'm a first time poster and had to show this photo of my first sourdough bake! No commercial yeast - just starter. It's definitely a long way from perfect (need to watch more videos of scoring) but I'm excited about it, and highly motivated to continue learning. I got some great tips from this site and look forward to posting many more bakes!
Old Video - Dough Trough & WFO
I stumbled upon a nice old breadmaking video on Youtube. It's German and shows an old family bakery from 1960.
A classic wooden trough and wood fired oven setup. Worth a watch if you get a chance (and apologies if already posted here). Look out for the loaves being pulled from the oven near the end of baking for a cornstarch glaze and then popped back in.
