Hello everyone,

I'm thankful to have found this site, with its recipes, lessons, and forums. I just started baking bread in January after giving my wife Ken Forkish's book Flour Water Salt Yeast as one of her Christmas presents this past year. We love to cook and bake together and gave each other a few kitchen-related gifts. When my wife saw Ken's book, she said, "Ah, this book is not the gift, but the bread you'll learn to bake.” There started my journey into bread baking as a retired electrical engineer.

My name is Liz, and as it says, I live in Ohio, oriiginally from Rockland County, NY. 30 miles from Manhattan.

I was looking online for recipes for NY hard rolls, which I miss terribly, and haven't had 1 in 3 years, and came upon this forum.

I am retired, and just recently got into making bread, cause I was always working so didn't take the time. I'm hoping to learn a lot from like minded people.

As I've geared up for breadmaking, several google searches for info brought me to this website. Seems like a great group to be a part of.

A few weeks ago I decided  to reverse the low-carb dietary changes I made some 20 years ago, and  rediscovered the old Oster breadmaker that I stashed away back then. It's been great rediscovering how wonderful freshly-baked bread can be. And the body is loving it - I've lost 6 pounds in 3 weeks! Who woulda thunk it  :)

Bread app with baker's percentages calculator and baking journal

Hi 

I recently started baking and found myself resorting to spreadsheets to recalculate ingredients after changing total volume or percentages. I guess I'm not the only one doing that!

I made an app that's easier to use than a spreadsheet. I've made all the loaves in there so I know they work ok, but I haven't thoroughly tested the app and it may have glitches.

Because I find it useful, I thought I'd share it here in case anyone else is helped by it:

I did a search for “baked bread oven humid vs steam” and found this site. Apparently just what I was looking for!

I’m very much a pandemic bread baking noob. I’ve learned most everything I know from Bake with Jack (Jack Sturgis) on youtube (love the guy). Up until recently, I spent the last 2 years trying to master the basic white sandwich loaf (just baking every now and then). But now I’m baking more regularly and have tried whole wheat, then enriched, and now have made kolache buns stuffed with ham and cheese!! 😍😍😍

This is great forum. I'm brand new to baking  bread at 57 and have discovered there's a lot more types of bread than plain sandwich I used buy. Lol This is an art. After watching many videos of others baking. I jumped right in and bought a grain mill along with a couple of mixers though I've since discovered that I really like the stretch and fold method with high hydration doughs for the softness of crumb and crisp crust. I hope to learn a lot from others and to make new friends along my baking journey. Thank you for letting me join you.
