Bread Mixinig Time

Please could anyone assist me with this question: Has dough mixing time anything to do witrh the texture of bread?

Which is better: Convection oven or Deck oven?

i AM PLANNING TO BUY AN OVEN FOR BAKING SOFT BREAD. COULD ANY ONE ADVISE ME ON WHICH OF THESE OVEN IS BETTER? I WILL APPRECIATE A QUICK RESPONSE.

bakeries

Hi,

 I just moved to Oak Park, Il, which is just west of Chicago.  There are three bakeries in town, two of which are aweful IMHO and one that looks like it started decades before the artisanal movement.  I had hopes for the Prarie Bread Kitchen because it had a sense of place and is definitely home-grown, but the bread could just as well come from the supermarket.  Great Harvest is a chain, and their speciality seems to be flavored Wonder-bread style breads.  No thanks.

Falls Baking Company, Fergus Falls Minnesota

I was visiting relatives in Fergus Falls earlier this month and my mother took me over to the Falls Baking Company.  She shops there about once a weeks.

 We got some baguettes, ciabatta, and other stuff, and it was great.  They have a web site:

bakery

Hello everyone. 

  I am hoping someone can help me.

I am in need of taking some artisan bread classes.

I am looking to build a commercial kitchen to bake breads and pastries out of for wholesale and retail. 

I have found a few classes in Portland and Seattle but I am not sure who is the best?

Would like to stay as close to Idaho as possible.

Thanks for any info I can get.

Lots of german sourdoughs, baguettes, wonderful pasties.

If I can't bake I buy bread here.

Denver pizza and bread shops

My son and I are going to Denver this weekend to catch the Police concert and would like to check out any Artisan bakeries and also any Pizza places.  Anyone have any recommendations?

Trio, A Brick Oven Cafe--Greenville, SC


Wonderful pizzas at Trio. My favorite is the Margherita, so simple, yet so tasty. The dough is chewy on the inside, crisp on the outside, with full flavor. My favorite thing about the crust are the areas of that great, ever-so-slightly burned color you get from a wood-fired oven.

Volker's Bread (UT)

Volker's bakery - based out of Kamas - makes the most amazing bread I think I have ever had. They sell their bread at farmer's markets and fairs across Utah. They also sell from a stand in their hometown of Kamas. I can't resist buying a loaf whenever I drive by (I particularly recommend the asiago cheese bread). Stop by and get a loaf if you find them!
