berlin natural bakery seem to have some seriously good spelt options.  i'm wondering if anyone here has bought flour or other products from them, and if so, how they were to deal with.  i just found them via google while looking for white spelt flour

ISO: Great bread, traditional bakeries in vicinity of Barcelona and Andorra

We're flying into Barcelona and then traveling to Andorra for hiking. We also would LOVE(!!)  to eat great bread and visit some bakeries that keep alive traditional baking practices.

I haven't been able to find much information online.

I would appreciate any insights on where to find great bread and visit bakeries doing hand-artisan bread baking.

Polin, Picard, or Empire Baking Systems deck oven?

I'm planning to open a small bakery in 2019. While  I wait for our local code enforcer to tell me if I need a type 2 hood over a 2-deck, single-phase electric oven I could use some advice. I'm looking at Polin stratos, Empire Baking System, and Picard brands. Any advice or warnings about any of these brands? Thank you for your help!

chocolate chocolate chip bagel

if i were to make chocolate bagel with added chocolate chips on it, how many grams would it takes for cocoa powder and chocolate chips? should i substitute some parts of flour for cocoa powder or can i just added cocoa powder without substituting?
