100% fresh milled whole wheat blueberry muffins

Quick breads are so much easier!

We don't eat a ton of sweets here, but we really enjoy blueberry muffins when fresh, local blueberries are plentiful at the farmer's market and the food co-op.

I've worked out a new recipe since getting my Mockmill, using 100% fresh-milled White Sonora wheat berries.

85 g butter

128 g sugar

2 large eggs

241 g White Sonora wheat berries, ground fine (I put them in the freezer for a little while so they'll come out of the mill at close to room temperature)

1 tsp. (3 g) baking powder

Will have run out of bread before my next sourdough bake tomorrow. Plus, I need to prep my starter which is in need of some TLC. So this is a throw together yeasted barley bread, with a tangzhong and some old starter (instead of discarding any for my starter feed tonight). 

 

  • 340g whole barley flour
  • 60g bread flour (was going to be 100% barley but ran out of flour) 
  • 320g water
  • 8g salt
  • 2g dried yeast
  • + Some whole rye starter @ 70% hydration - unfed (don't know how much but about 30g)

Scottish scones

M.C. Beaton writes a series of mysteries set in the Scottish Highlands. Several of the books praise the scones made by the Currie sisters as being "feather-light."

Is this different from the typical English scone? Every scone I've ever had was rather dense. How do you make a feather-light scone?

My second loaf in as many days. Last night's trial loaf of 100% whole spelt was a big success so tonight I bring you 90% whole spelt with 10% whole rye. Quick, easy and delicious. For the buttermilk I used full fat milk with apple cider vinegar otherwise here is Grahame's original post with beautiful loaves accompanied by the recipe...

Pancake Day

Sundays are my Pancake days and are flavoured with what I have on hand.

3/4 cup Fife Flour, 1/2 cup Cream Water, one egg. Fresh Ground, Allspice, Cloves and nutmeg. Fancy Molasses and Apple filling. Sauce is a garden Sour cherry with dried figs and Vanilla bean.

Mix hydrated for 90 min, then Baking powder added and left another 15min.
