I've just been given a Breville BR2 bread maker, but minus the instructions. I'm hoping to find someone that has them, and would be kind enough to copy them for me! Submitted by lorabreeze on January 22, 2007 - 9:07pm replicate Rudi's spelt ancient grain breadWE really like Rudi's Organic Spelt Ancient Grain Bread (available at Whole Foods and Wild Oats) but hate paying almost $5.00 a loaf. Can anyone recommend a bread machine recipe that simulates this bread? Ingredients include spelt flour, organic evap cane juice, quinoa flour, sesame seeds, millet, flax seed, kamut flour, amaranth flour, sunflower seeds, potato flour, oil, salt, molasses, oat flour, ..... This bread is crunchy and so tasty. Our friends that won't eat anything but white bread even like it! Thanks so much for any help you can give. The organic mixes are home grown, stoneground and packed on our family farm. Makes great bread and mostly its 'just add water' to the mix in your bread machine. Makes great bread by hand too. Makes a great hostess gift, even if you make it from a mix it's appreciated. I am ready to delve into an everyday loaf that I can make a couple times a week and doesn't have all the cr*p that's in commercial breads. Currently, I buy a commercial whole wheat bread that is "double-fiber"--5 grams/slice! So, a sandwich made with this bread gives you 40% of the RDA for fiber at only 40 calories per slice. This is a boon for folks like me who count calories or otherwise pay attention to their diets. While I love making bread "the real way" with a fussy one year old, sometimes I just don't have the time. This recipie I adapted from the recipe that came with my breadmaker. For 1.5 lb loaf: 1 cup + 2 Tbsp water (room temperature, 75 to 85 degrees F or 24 to 30 C) 1 Tbsp + 1-1/2 tsp butter or margerine, softened 1/4 cup firmly packed brown sugar 1 tablespoon honey 1-1/4 tsp. salt 1 1/2 cups unbleached flour 2 cups whole wheat flour 2 tablespoons flaxseed meal 2-1/4 tsp. yeast (I found that active dry yeast works fine, but you can use breadmaker yeast too). I recently ran across a delightful bread machine book called "The Best Low-Fat, No-Sugar Bread Machine Cookbook Ever." By Madge Rosenberg. For those of us who are diabetic, this is excellent. I didn't bake it it my machine, but put it in a loaf pan to raise. You have to let it raise a lot higher than a regular loaf. But so far, they are all a delight for the taste buds. The Herbed Pita Bread tasts just great. Hope this will help some diabetic people who have stopped eating bread because of the carbs. You can get this book through Amazon.com at a really low price.
