french hobart n50

good evening to all

i have repainted my first hobart n50, reassembled and used it, and all is well.

i have a second hobart n50 which i have also dismantled and repainted but there is a big problem, which i can't find.

it works, but after a few gear changes it starts spinning in a vacuum.

it feels like it's coming loose somewhere inside.

I've taken it apart once, thinking the problem was solved, but it keeps going.

has anyone ever had this problem when reassembling?

Ok, so I've waited basically a whole year to make sure that baking wasn't some fad for me.  I'm finally going to treat myself to some low-level baking gear.  Any key things I'm missing, here?  Gotta write this letter to Santa!

Heating pad (for a proofing mini fridge)

 

I waited a year to get a bench knife and wow, I really appreciate that little $7 thingie, now!  Patience is the magic ingredient.

Hello, I am new to this wonderful group of bakers. Where can I buy an oval banneton made from wood pump (made in Europe, like Germany, Spain, etc.) I would prefer to avoid the ones made in China. Please send me links, I would love to look at all of them. I have seen the Bulka brand on Amazon but I wonder if there any companies that possibly make them here in the US as well. ( I had a hard time finding these specific topics on forum)

Slicing bread - manual or electric?

I have a VERY good bread-slicing knife, but I can never seem to get a uniform cut.  It always seems to drift down to the bottom where it gets very thin.  My crust is a bit tough and the crumb is a bit light - which makes the cutting a real challenge!

I was wondering if an electric knife would provide better results than trying to steer the manual knife.

Gluten-free options in bread makers

I've got a bread machine that does not perform well when making gluten-free bread. I've seen that there are bread machines that have such an option, but do not know whether this is something legitimate or just a marketing ploy.

Does anyone have any experience with these machines? Is it worth the money to purchase one?

Real 100% rye bread in a cloche or dutch oven or not?

Would a bread cloche or Dutch oven be good for baking 100% rye sourdough bread?

I have developed an interest in real 100% dark rye sourdough bread like a real Finnish or Estonian rye bread. I talked to some Finns of course, but now my question is more baking equipment specific. They pointed me towards some authentic recipes, but I wanted to get opinions about whether you would use a cloche or DO for this.

Best Home Oven

I have been a home sourdough bread baker for years. My current Capital Cooking Propane range cooling fan went on me after 8 years. Trying to work with company and parts supplier for replace with new fan. A newer version of the fan doesn't work with my oven. Anyone have suggestions for a middle of the road oven with either burners or induction cooktop that will bake decent breads.

Have a KitchenAid stand mixer model KP26M9PCCU that sounds to be struggling pretty hard and I was wondering if I should consider a return or repair? It sounds like it is struggling, but it doesn't seem like a lot of dough to me, but I am no baker.
