BBA Stollen practice run

This recipe is from P. Reinhart's BBA.  I only changed the soaking of the fruit and extract amounts.  I thought I would give my first attempt at a stollen a trial run before making one to take as a gift.  There will be some changes made in the next one I make...it will have marizpan and a few other adjustments in handling.  I mixed this batch all by hand and the only candied fruit I used was a few candied red cherries because I like their bright color.  We really enjoyed the flavor and this is my results.

Lot's of the freshest dried fruits. Apricots, apples, cherries, cranberries, peaches, dates, golden and dark raisins and a few candied red cherries for their bright color.

 

One Large Loaf

 

Fresh sure beats that dried up purchased one I remember from Christmas past.  I'm looking forward to making another one or two loaves!

That turned out beautiful. I do trial runs too :-)

I am actually going to be making the BBA Stollen this weekend. Did you make any adjustments to the formula or did it come out as specified?

Hey- good to see "Nates"...I mean "Bates Nut Farm"- we're former San Diegoan's. Small world.

It's a bit tricky with the shaping as others have expressed and I didn't care for the kneading time after the fruit was added...I will change that on my next batch and do more kneading before adding the fruit.  I mixed all by hand.  I kept it alcohol free for the grandkids and just soaked the fruit shortly in about half the lemon extract and some orange and apple juice.  The dried fruit was fresh and soft and so didn't absorb much moisture.  Also I let my preferment go a little to long.  I used my KA All Purpose flour.  It's a nice recipe but I would rather not use the candied fruits. 

I love Bates Nut Farm.  It's not far from here and the local grocer keeps their products.  You used to live in San Diego and where are you now?

To answer your question, we moved to Idaho. We like it here but miss San Diego/ RB, and especially Ramona :-( (we moved all over the place down there!)
