Request for Floyd to make a new forum topic

Floyd,

I'd like to see a place where we can group spcedific topics of health loaves/ non traditional loaves

weight watchers etc

gluten free

wheat free

 

or if you have a better way to find /group them that would be good as well

I made 12 loaves of bread for this thanksgiving (including home made stuffing) and I just found out today that I'm allergic to wheat :) so I guess I have to learn more about rye bread YUM!

If you would like to eat rye bread because you are allergiec to gluten, try the 4 day rye sourdough recipe. You need sourdough in order to bake rye bread because it has more fiber than wheat. I bake only with sourdough because it is better for the digestive system. I baked the 4 day rye bread the other day, it was delicious. I described it in another post. forgot where.

forgot to mention that I baked the bread without commercial yeast.

Do you have experience with sourdough?

I'd be happy to set up a forum for "special baking needs" discussions.  It'd be nice if it had a broad enough title that it could encompass more than just a single dietary speciality since we have folks here who bake gluten-free, others who are lactose intolerant, others diabetic, and so on. I don't want to split hairs too much and end up with 25 seperate forums for each of those categories, each one containing only a handful of posts.

How about... "Baking for Restricted Diets"? Or just "Baking with Restrictions"?  That'd be broad enough to even encompass things like Weight Watchers or religious restrictions to diets.

I liked your first suggestion, and I think it describes a nice broad category that does just what you are looking for.  Sufficiently broad, yet clearly not for every post on the forum.

Sorry to hijack the thread, but I have searched for the 4 Day Rye with no success.  Would love to try it. Any help in finding would be very much appreciated.

Hi Carol,

I am in the process of creating an E-Book with  step-by-step instructions plus picture to every step.

It's not that easy to bake a 60% rye bread without commercial yeast.

I myself have trouble with the digestive system and this recipe is ideal for me. It is light, lots of holes, easy to digest and tastes great. I made it with Bauernbrot / Farmers Bread spices, like caraway, fennel, cardamom. Another version is just with salt and Sunflower Seeds and Flax Seeds. I love it.
