Traditional Holiday cookie, Cartellate/Cluster are filled with honey, nuts & spices

You ask, what could be more decadent, and I say absolutely nothing. Cartellate are traditionally made during Christmas. They are traditional Pulgiese fried pastries, filled with roasted almonds, honey, spices and chocolate.

They are a holiday cookie and although mostly made at Christmas time, they are our star dessert on our Thanksgiving table. They just seemed so suited to a beautiful Thanksgiving dessert table. 

These cookies are a labor of love and not easy to make, but the good news is that you can place the shells in a brown paper bag and keep some for Christmas.

these look very yummy. is it possible to bake the shells instead of fry them?

Hi Claudia,

 

Thanks for the comment. I've never baked them and I've also never seen the shells in Italy baked.  I suggest that you try baking a few to see how it works. I'll also try baking a few at Christmas time and will update this post if they come out OK. If you are worried about the oil, I suggest that you drain them on a rack with paper under for drainage. Make sure you turn them upside down so that the oil drains out of the pockets completely.
