Back Home Bakery Intern Callie

Callie (calliekoch) came from Fort Collins, Colorado to the Back Home Bakery last week (Sept 5-13) for her one week internship.  Although new to sourdoughs, Callie's been baking and cooking for a while, and it showed in her meticulous work and attention to detail.

for sharing your time, lessons, and knowledge with me last week. My own baking skills grew by leaps and bounds (for example my shaping at the beginning vs. the end of the week) as did my appreciation for the practice after seeing how much hord work goes into it. I am eager to keep moving forward with it.

 

My family and I have already been enjoying the delicious bits I brought back to Colorado. I'll try doing some of your recipes on my own soon so as to keep them satisfied after we run out.

 

Good luck to the next interns who will have the opportunity to spend one very satisfying week with Mark at his bakery.

I wonder if we can find a YouTube video on how to braid like that.  I haven't seen that kind of braid before.

I can figure it out.  Easy peasy.  ...and here's the church and there's the steeple... What happens if one were to make a steeple every so often?  oops, a leak in the church roof...

I realized after the first couple strudel braids that having braided hair for years past helped me to better hold the dough and weave the pieces together. Funny how something like that would ever come in handy while baking. . .

 

Mark, maybe your next video project can be a braiding tutorial like your shaping ones.
