Winco Foods - the flours in the bulk section

I have been shopping at Winco in the bulk section and noticed that they carry -

Whole Wheat Flour and Whole Wheat Bread Flour among many other flours. This got me wondering what exactly the difference was because had not heard of a Whole Wheat Bread Flour. Last time I was there the guy working in that department told me that if I wanted to buy a full bag next time call 2 days before shopping and they will set aside for me. So today I called and talk to them and asked them about some of their flours and this is what he told me:

Whole Wheat Bread Flour  item #1748 - Bob's Red Mill Whole Wheat Flour

Whole Wheat Pastry Flour item #1731 - Bob's Red Mill Whole Wheat Pastry Flour

Bread Flour - ADM Milling Atlas Flour (which their website http://www.adm.com/en-US/products/Documents/ADM-Milling-Sheet.pdf says is First                    Clear Bakers Flour 14.5%

All Purpose Flour - ADM Milling, I believe it is the one they call ADM H&R 10.25%

Dark Rye Flour - Bob's Red Mill

He also told me that the if we want a full bag - the Bob's Red Mill comes in 25 lb and will receive 5% off the price for full bag purchase. The ADM flours are 50 lb bags and the price is the same as if buying by the pound in bulk section - just more convenient if using large amounts.

I do buy Whole wheat bread flour for my breads from my local organic store. I am not sure of the technical differences but I have found that the bread is lighter than from regular stone ground whole wheat.

How to sort this ww winco thing. I too shop winco and have been pestering them for over a year to carry a bread flour. Their bread flour unbleached has 3 grams of protein per ¼ cup. On this I could be mistaken as  I looked about a month ago. I remember thinking that's not high at all. I am sure it can't be a clear Bakers flour. I think you can buy bobs stuff cheaper at Winco than at the mill. Another good source is cash & carry. I ordered from them a 14½ % unbleached pendleton mills flour called big Spring. 

I have an idea. Lets check the bags. Get the info off the bag. They will order it anyway and they will hold it for you but they do not require you to buy it. I will check bags next time I go but it won't be for at least a week or two.

I sounds like we can get a good variety of flour between Winco and Cash & Carry & Bobs. Now if we can find a source of durham flour that doesn't break the bank it will be a good day in the city.

I have asked about their bread flour 2 times - once on the phone and they told me it was the ADM milling and the other time I was in the store and asked and he brought the opened bag out to show me and it said it was the ADM Milling Atlas flour. Let me know what you find out.

It is dark in color & somewhat course, but bakes up nice. I have switched to Bob's white whole wheat after using KA that was so wonderful but not affordable.

Deanne, You seeing the bag is good enough for me. My next step is to buy some and try it. Thanks for sharing.
