Malt loaf

Some one asked me for my recipe for malt loaf, and I can't find who it was.

any way lets hope they see I have posted it.;-))) Clarks may still carry the Sutarnex,

or pehaps tell you who does, Clarks were quite willing to sell it to the public.......

Malt loaf,,,,,  This is the real thing. :-))  

 400 gr Sultarnex

200 gr white flour 200 raisins /sultanas , your choice

 200 gr chopped small dates

 2 x 7 gr yeast

 DO NOT ADD SALT Mix flours, yeast and enough water to make a nice dough,

 about 4 mins on slow or by hand. Add fruit and disperse through dough. scale

 dough to size you require, place in greased pan/pans, allow to dough to puff and rise.

Place greased peice foil on top of loaf before baking.   Bake 360 about 1 hour depending on size.

I looked up sultarnex and hardly found any info.  I assume that it would be hard to find in the US.  I have been promising to make malt loaf for my British husband, so do you know a way that I could do it with ingredients found here?  I'd love to follow your recipe but I'm just not sure that it is possible!  I'd be very open to suggestions of substitutions if you have any ideas.

Qahtan, even if wessexmill isn't close to you, they may well do mail order. I buy some of my flours from Shipton Mill and have found the cost reasonable. In fact, I usually try to buy enough at a time to get free delivery. It may help you...

 The only way I would have been able to get Sultarnex sent to me here in Southern Ontario was if I would have sorta gone int business.

 we didn't get into the nitty gritty but I wasn't interested in that.

 As  I said earlier I did bring some Sultarnex back to Canada with me from my last trip, but that was just enough for my own use.

As for a recipe without Sultarnex and trying to make malt loaf with out it, I have never had any luck, and believe me I have tried many many ways, and every recipe you see say's it is the one,  it is never the one I have been looking for.  

It's a bit like Bermaline, another specialized loaf from a long time ago. I have tried to duplicate it with no luck..

The last Bermaline loaf was from Selfridges bakery, in Oxford Street, London uk. and there it was only sold after 2.00pm......  so sorry I can't help you. qahtan

Well Sultarnex will just have to be one more thing that I'll be bringing back home from our England trip next month.  I'm glad that you let me know that it is a must.  I'm sure my husband will be able to tell, having grown up with it.
