converting recepies from bread machine baking to hand baking

Hello, I  have been baking bread with a bread machine for years. I usually make the dough then shape it and bake it in my oven. I love my bread machine cookbook . Any idea on how I convert the recepies to mix by hand ? I plan to use a stand mixer to mix the ingredients .

When I adapt a recipe from one preparation method to another I usually stick with the basic recipe and simply change the technique.  The results of the work tell me what, if anything, I need to change.  There is one exception; I don't use instant or fast acting yeast.  I always use Active Dry Yeast and apply Reinhart's formula for 1.36 Active Dry Yeast to 1 Instant Yeast (1.36 quantity ADY = same as 1 quantity IY)

I dont' find much difference between mixing in a bread machine and a stand mixer, except that I have to change from a paddle (for the initial mix) to a dough hook (for kneading).

Thanks, I have been using SAF yeast in my bread machine. I will try your idea and see how it comes out.

I have always used a bread machine to knead the dough and use my regular oven to bake. I love my bread machine books too and use them all the time.

I also use the SAF Instant Yeast. :)

Made my first loaf with the stand mixer. came out pretty good. I used the SAF . Have u used the stand mixer to mix and make the dough before? I still had to knead a bit but I it was not as smooth as I wanted it to be.

I can't mix by hand due to medical condition and love to bring my bread baking as close to hand mixing as possible.

Thanks Betty, I will check it out. The most confusing part is: when would u add the starter with sourdough breads ? with a bread machine the sequence makes a difference. SO far my sourdough have not come out so good. I will keep at it.
