Mark Sinclair's Portuguese Sweet Bread

Portuguese Sweet Bread

- What's a portuguese roll?
- Ohhhhhhhh, it's verrrrrrrry good.

So said Michael Stern during the April 4th episode of The Splendid Table.

They're mildly sweet with a touch of honey but don't taste "eggy" or like cake. The dough is a joy to work with and makes your kitchen smell wonderful as the buns are baking. I enjoy having them lightly toasted with a bit of jam, or just plain. I've heard they make excellent french toast, pulled pork sandwiches, or bacon, egg and cheese sandwiches too. They're simply excellent - in fact, someone told me it was even his/her new favourite bread.

PSB2

These have been a huge hit among other Fresh Loafers and I couldn't agree more. :D

Thanks for sharing this recipe, Mark!

I never made this kind of bread (or rolls), but yours look very nice and yummy.

Truth is, I've come to like making rolls, partly because when I bring them to work the next day, everyone can grab one instead of leaving crumbs from slices all over the lunchroom and partly because I loved how these rolls looked based on Howard's post and the tutorial videos on Mark's bakery homepage.

I'll say - you've been baking some gorgeous and super delicious looking breads! Glad to hear those little méteils au bleu turned out so well in the end!

My F I L loves them. They were just what he remembered from his Navy days.

your father-in-law is very lucky to have such an enthusiastic baker to make baked goods for him. :)

Thank you, but you know we bakers secretly just love to bake something for someone else. It just gives us another reason to bake even more. HHmmmm. I could take a loaf or two to that old lady that moved down the street! ; )
