Yet another starter question

While I was baking my white sourdough yesterday, my wheat starter was fine, then I stirred it.  It fell.  Before I went to bed, I fed it again, then again this morning.  So my question is, if I had left it alone yesterday after it fell, could I have used it today without feeding it?

Yes and no. Yes but it would have taken longer. It would have been better to feed it but this would take longer. So Yes and No. : -) It is always better to use your starter at it's peak.

Jim,

 

That's what I thought and why I fed it again.  I started a rye starter just now.  That's a very dense flour, but rises quicker, correct?
