HELP! I have over-proofed my Whole-Wheat Bread what can I do!? Quick please : )

I just got home to two way over-proofed Whole Wheat loaves from the BBA.  I was hoping to add some flour and water to revive it, but reading back over the recipe, it seems more complicated since the wet ingredients were honey, veg. oil and egg.  Can I save it or is it bound for the garbage?

I would deflate the dough and reshape the loaves. Let them rise again, but be careful not to let them rise too high. Bake and hope for the best. Sometimes it works okay, and sometimes not so well. It all depends on how strong the gluten still is. Good luck!

I second SourdoLady.  There's still lots of food for the yeast to double again.  It might even turn out to be slightly tastier than usual.

You were right!  I punched it down and reshaped the loaves, it rose up again!  Maybe didn't rise as much, but tastes great!
