Baking Artisan Bread by Ciril Hitz, ISBN 1-59253-453-8, $16.49...List $24.99...SUPERB. I wouldn't like to be without this one.

The Cheese Board: Collective Works, Fwd. by Alice Waters. ISBN 1-58008-419-2... $14.93...List $21.95...Very good, nice Bread recipes throughout.

Thanks, Carl, for that update.  I see that Mr. Hitz is a bakery/pastry instructor at Johnson & Wales University in RI, where Reinhart also teaches, and wonder if you have noted any major differences between his book and the techniques and formulas presented by Reinhart.

is because of the exemplary step by step instructions with pics, the recipes in metric, weight, volume and baker's pct., the major categories of bread covered and one's probability of being successful with any of his recipes on the first attempt. He's probably the most impressive bread artist I've ever seen (confirmed by visiting his site). I rate his book No. 1 (overall content) of ALL the bread books I have, now 28 and counting.

I have no idea why I called you Carl.  My apologies.  I have no idea who Carl is.  I don't even know a Carl.  Gads......chalk it up to a brain burp during a bad day at the office!

Anyway, thanks for your comments on the book.  It's sitting in my Amazon basket....got to do a bit more shopping to bump up to free shipping.
