I've created a monster!

Well, I made a huge miscalculation when building my starter for Thursday night's bake. I was planning on quadrupling the Vermont Sourdough recipe, but instead of ending up with around 1300 grams tomorrow night, I have 1600 grams tonight! I was just going on autopilot, doubling twice a day, and now... well, I'm not sure what I'm going to do.

My plan was to bake 24 hours from now. I really don't want to throw out over 800 grams of starter, but there's no way I can continue to feed this monster. I wonder if it would be OK to skip the morning feeding and just use the entire 1600 grams tomorrow night.

Any thoughts on this? 

I guess I could always make 16 loaves of bread! Time to buy more flour!

Eric, put your starter in the fridge, don't feed it anymore, then use what you need tomorrow.  Then rebuild from your remaining 300g.  If you don't want to save that much, there are lots of things you can do with starter (pancakes, waffels, quick breads, etc.).

Thanks, Phyl. I was worried that the starter might be exhausted by tonight, even if refrigerated. I'll give it a try.
