I just wanted to thank everyone on this forum for all their time and input.  I recently bought a DLX and took a long time deciding if I wanted a DLX or a Bosch.  After reading all the forum posts on both of those mixers as well as all the info on KA and other mixers I eventually went with the DLX and am EXTREMELY happy.  I had a 5 qt KA that I burned up about 2 yrs ago.  I replaced it with a 6 qt KA and was happy with it until I started making more whole grain bread and using fresh ground flour.  I was just so concerned I would burn it up.  The DLX is awesome.  I had heard about the learning curve but didn't really have much of a problem.  It is totally different from anything I have ever used but it is simple enough.  It also makes great bread and is very quiet.  I was shocked at how quiet it was.  And the amount of bread you can make is insane.  I would never have even thought to double a 3-4 lb whole wheat recipe in my KA.  It had a hard enough time with just the 3-4 lbs.  And the results are impressive.  So anyway, I ramble.  I am just very happy with my DLX and thank you to everyone who shared their experiences here and helped in my decision making.

I'm very happy for you...and very happy to hear you are so happy with your new DLX...I have been seriously thinking about ordering one...they have been backlogged...may I ask where did you get yours?  I have so much STUFF on my counter now 'LOL'....what's one more thing!!

They are the best.  I got both my grain mills from them.  They are no longer backordered.  They finally arrived in the middle of Dec.  I got it just before Christmas.  It doesn't take up that much space either.  it is no bigger than my KA.  I did have to do some counter cleaning though.  Oh well, the kids didn't need that many sippy cups right? :)

I went through the same thing with burning up KA and researching what to buy.  We ended up with the DLX and couldn't be happier.  I've read a lot about the learning curve and really don't get it.  This thing just works and it doesn't try to jump off the counter like the KA did.

Recently, I have been making a lot of the Cocodrillo ciabata using half fresh ground whole wheat.  After autolese, I set the DLX about two thirds max speed and let it go for 12 minutes.  It is fascinating to watch in the last few minutes as the kneading action becomes pronounced.  I limit myself to a two loaf batch (500g flour) just because  a big batch of the 95% hydration recipe is too hard to handle in a small kitchen.  It comes out perfect every time.

I really get a kick out of the roller.  It is fascinating to watch it work.  I havn't tried any really high hydration doughs with it yet.  Maybe next time.  I didn't know you could turn it up that fast to knead.  The instruction book is a little vague, but I doubt you could kill this thinkgs motor.
