Blackbread Rolls

 

                                                                                                                                                                                                              This is a recipe I made

called Steakhouse Blackbread...It is made with a combination of Rye, Whole Wheat and Bread Flour...It turned out to be a very nice dense, tender, flavorful dinner roll...I was very tempted to add some raisins..next time I will as raisins would go very good with the rich flavor.

Those look terrific Sylvia! They don't look overly dense to me at all which I have a hard time with in rolls. Would you post the ratios and special ingredients? Are they brushed with butter? Looks delicious!!

Thank you Eric...The original recipe is taken from one of my favorite recipe cites called http://Allrecipes.com. under 'Steakhouse Black Bread'.  I have always loved a black bread served at the Outback resturant and this has come the closest...you'll be surprised too..it's a bread machine recipe...but highly rated!  I used K.A. Organic Whole Wheat, K.A. Rye, K.A. Bread flours. I brushed them with butter after baking.

I did not use my bread machine but my kitchenaid...I just kneaded the dough till I got barely a windowpane...I had a short time to get things done as we were on a time limit to make dinner and a movie...so I let the dough rise for only about 45 minutes and put it covered into the refrigerator...late that nite after returning from the the movie "Australia" of coarse...I took the dough out and let it warm up...by this time I wanted to go to bed...so I just quickly rolled it out about an 1 1/2" thick...still undecided what shape!!  So I sliced the dough into wide strips...still undecided...so cute the strips into squares...still wasn't happy..so folded the corners under and half-A...made balls...put them onto a tray of parchment lined..waited till they pretty much doubled and popped them into a preheated oven!  Gave a few spritz of steam...they were done...and to my surprise tasted really good!...so next time I'll be a little more patient ... because I'm sure they will be even better if given the proper attention...they do have a nice crumb!

Those are great looking rolls. Do they have that sweet finish like some of those brown breads? Really good!

Thank you Eli,  Sweet finish!  They are brushed with butter and I can smell just a hint of the chocolate, coffee and taste a hint of sweetness... regular molasses..and the brown sugar I think gives them this hint of sweetness.  Rather than using the dark molasses as suggested in the original recipe.  I'm waiting on some expresso powder I have ordered from K.A...and want to use that in the next batch instead of the extra strong black coffee used in this bake!  I think you can really adjust some flavors in this recipe to your own tastes!  I think " my opinion only" there is a difference between, Black breads maybe no spices, Brown breads "pudding" would have fruits and spices and could have say a lemon glaze or sauce and Chocolate breads with cherries and maybe some spices with an optional vanilla glaze...sounds tastey to me!!   It would be interesting to hear some opinions on these breads?

I've been wanting to make a different bread lately.  You got me.  I baked this last night.  I also made rolls and one small loaf.  I haven't tasted them yet, but they smell incredible.  They even smelled great while proofing. 

I also love allrecipes.  I regularly look for dinner ideas there.  The rating system with reviews is great.  Thanks for the recipe.

Love to see a picture of your breads!  I'm looking forward to a loaf with raisins next!

I love the way you shaped and slashed your rolls.  Your kids are great little roll shapers.  I'am glad everyone enjoyed them.
